Can't go wrong with soup. I would roast first with honey for maximum flavour.

They will keep a couple of weeks in a cool place. Slice them thinly width ways with some thinly sliced potatoes and fry to make game chips. It is nearly pheasant season and they pair well together with leeks and bacon.

Use a peeler to create parsnip ribbons, fry some pancetta then add the ribbons, mix with cooked tagliatelle and top with some olive oil and parmesan, totally lovely and really quick! Also works with a little cream and wholegrain mustard added at the end, or with some small cubes of haloumi instead of the pancetta

Curried parsnip and apple soup.

Mashed parsnip freeze well and are delicious with pork or beef.

Roast carrot and parsnip and potatoe with cumin. Devour alone or serve with something....!!

I once had a parsnip cake at a cafe - sounds odd but it was very much like a carrot cake and pretty delicious. I've wanted to make one since trying it but unfortunately I can't get parsnips where I live. 😩

Sliced and layered, make a gratin with cheese, cream/milk & some garlic, as you would a potato dauphinois, or use a selection of root vegetables including parsnips & potatoes, carrots, celeriac. Goes well with venison casserole or beef daube or gammon joint.

Roast with sliced beetroot and thyme, surprisingly good with fish.
