Only got myself to feed and will have to go to the shop for something. Bit stuck for inspo/don't really know what I fancy. Can't be bothered with anything too convoluted today.

I'm thinking about spinach and ricotta tortellini, in pesto (which I have in the fridge and needs using) with bread and aioli (which I also have) but I just had that the other day. I also have a limp romaine lettuce and red pepper in the fridge too. Theres some cucumber and red onion in there as well.

Puff pastry sheet topped with tomato puree, herbs, meats and mozzarella. Its like a pastry pizza and goes down a storm with the DC.

Burgers from local butcher, bbq chicken wings, jacket potatoes, coleslaw, couscous salad & pasta, pesto & pine nut salad.

Lentil bolognese, salad and will probably make some garlic bread to go with it as well since we have some baguette left from lunch.

We just had spaghetti and meat(free)balls with a tomato garlic and basil sauce and garlic bread. Ds (2) got very messy. Grin

Another tip for lettuce that’s past its best is you can cook it down in stock or use it in soup.

If you have leftover chicken to use, even better! - nestle it into the liquid (top up if required) and let it gently warm through. Can be had over rice, with baby potatoes or with crusty bread! 😋😋

We have leftover pork and are using it to make al pastor nachos. Needed something a bit special, it's been a very Monday Monday for DH!

Ratatouille - made it in the slow cooker yesterday - 1 aubergine, 2 courgettes, 2 onions, 2x celery, 1 red, 1 yellow, 1 green pepper, ~500g chestnut mushrooms, 3x tins of toms, couple of bay leaves, mixed herbs - 4hrs on high - cover with slices of cheddar cheese. Like all veg meals - so much better with a couple of Cumberland sausages. All veg given a quick run around in the frying pan.

Shroomdog, bean and potato baked casserole. With chives. I over did it in the oven so was dry as f but well worth the carb intake.

Just had lovely left over pasta. Was going to have a barbecue but rain saw to that. Marinating paneer will have to wait until tomorrow. Forecast wasn’t accurate today.

First day off in what feels like 1000 years. I'm drinking wine and eating crisps with hummus. I think that's most food groups sorted.

Some kind of beef hash thing that is going to be made with the rest of last nights roast rib of beef.
It will be all fried up with potatoes and onions til it’s all crispy and served with a fried egg and some sourdough toast.
