The best cheese toastie recipe

I'm very very tempted to go off plan and go out for bread to make a cheese toastie.

I don't usually eat bread for blood sugar and weight reasons. There is no low carb bread here.

If I do, I want to maximise my taste experience 😂 I will have to offset it with all 10k steps on the elliptical trainer today, so it needs to be worth it.

I have a bit of grated mozzerella, so would put a slice of cheddar and mozzarella, chorizo, very very thin onion, very very thin green pepper and tomato to make pizza toasties.

Am I missing a trick somewhere? Is there a better combination? A cheese more suited to toasties?

I think I'm definitely going to the shop today 😂

Do you mean a toasted sandwich, or open-topped? I make cheese on toast for my husband, and I mix grated cheddar with a beaten egg and a dash of worcestershire sauce, then grill it.

SmidgenofaPigeon · 21/07/2021 09:49

Butter on the outside. So bread with butter side down, and I use a pan on the hob to cook mine. American grilled cheese style?

Works very well with sliced ham and cheese, bit of mustard, (on the inside!) would get messy if you put a load of ingredients in as you have to flip it over.

No, I mean a proper dirty white sliced bread in a sandwich toaster concoction.

Parmesan down first and toast the sandwich so it has a Parmesan crust.

Or make a cheese bechemal sauce and add your chorizo to it and put that in the middle...

really cheapo pre-grated cheddar is the best toastie cheese for texture. I mix with a decent mature cheddar for improved flavour. Butter on the outside, thick slice of ham, cooked in a Breville, eaten with picked gherkins on the side.

BelleClapper · 21/07/2021 10:15

You need proper cheapo over processed white bread and the mixed grated mozzarella and cheddar. Oh that’s made me hungry.

I’m off to the shop.

That's the mozzerella I've got.

I’m going to have a open faced cheese toastie with baked beans on top

Megan2018 · 21/07/2021 10:27

I like mushrooms and gouda or edam with cheddar/mozzarella mix.

pumpkinpie01 · 21/07/2021 10:29

Thick white bread with Brie and chilli jam

BeastOfBODMAS · 21/07/2021 10:32

Cheddar and marmite

Grilled cheese is so much better then a Breville/toasted sandwich.

White bread, grated cheese, Worcester sauce if you like it. Butter the bread on both sides, then a bit of oil in a frying pan and fry it, turning over regularly until it's golden brown.

Gingerkittykat · 21/07/2021 10:49

Try Nigella's mozarella in carrozza. It's a massive faff and about a zillion calories but worth it.

My favourite everyday toastie is mozzarella (from a ball), tomato and thinly sliced onion.

Another favourite is cheese, ham and pineapple but I've got a feeling that will be a controversial choice!

DD made me an amazing cheese toastie the other day with four types of cheese slices- mature cheddar, Monterey Jack, mozzarella, Red Leicester and Dijon mustard, she buttered the bread on the outside and fried it so it was really crispy.

The bread was proper fresh white bread from a whole loaf, I don't do sliced.

OldTinHat · 21/07/2021 11:04

I'm also off to the shop for bread...goodbye diet!

GCrebel · 21/07/2021 11:07

Two suggestions.

Heat a panini press, grate strong cheese over a crumpet, cover with greaseproof paper and heat until the cheese is just a bit crunchy at the edges. Bloody marvelous.

For a cheat's rarebit, mix grated strong cheese into creme fraiche along with your choice of mustard, lea & perrins or marmite and cook in a sandwich toaster.

mrsm43s · 21/07/2021 11:10

Possibility a bit controversial, but cheese and hoi sin sauce in a breville is a staple in this house.

magicstar1 · 21/07/2021 11:13

You have to try frying it in the pan with mayo on the outside...not butter, just mayo. It's amazing!!

iklboo · 21/07/2021 11:13

Grated strong cheddar, English or whole grain mustard, Worcestershire sauce & an egg yolk. Add some fried onion if you like. Mix well.

Butter outside of bread and pile on the mix. Add the top slice & stick in the toastie machine until it's done to your liking.

iklboo · 21/07/2021 11:14

@magicstar1 - YES! DS made us some 'pan toasties' the other week and they were amazing.

Lorw · 21/07/2021 11:16

Probs going to be flamed for this, but I think I’m the only one who enjoys having cheese toasties with the cheapo cheese slices 😂 they go all gooey and are just delish. I like keeping it simple nothing else but buttered bread, cheese slices and whack in a frying pan till super crispy and serve with tomato sauce or a nice veg soup...yum!

ElaborateSalad · 21/07/2021 11:19

Oh you bastards. Now I must go to the shop too. I'm going to have cheddar, ham, and jalapeños in mine.

DS is having a nap at the moment though, so I must wait forever for my fatty prize.

I've got some halloumi in the fridge. I'm considering a halloumi and pomegranate seed concoction as a starter before I can get the bread. Today will be cheestastic!

WombatStewForTea · 21/07/2021 11:21

Sod the peppers and onions!
Slices of cheese and a spoon of beans! Hotter than the fires of hell so let it cool before you bite into it. If you're feeling extra adventurous add marmite

Honeyroar · 21/07/2021 11:27

I think you can’t beat a good quality mature cheddar (I find Pilgrims tastes the best in a toastie) with red onion and shredded ham. I prefer a focaccia bread (Sainsbury’s do a good one), which doesn’t need butter adding, toasted in a flat sandwich press.

I like those in pitta breads, done in the toaster. Sometimes I used to add ham.
