I don’t want to cook for the next few days, what are you eating in this heat?

Me, dh and 2 x ds.

We were going to have a bbq for tea but it’s too hot for that, tea today appears to be ice cream Grin

Looking ahead I don’t really fancy cooking for the next few days!! All but me are salad refusers and dh and ds9 don’t really eat vegetables either which makes summery hot weather foods very hard!

What do you eat when it’s as hot as this?

I made a Spanish omelette and then we had it cold with coleslaw and crusty bread.

When we can’t be bothered cooking or it’s too hot etc, I just put some chicken goujons in the oven (fake chicken for us as veggie) and then we have it on a baguette with cherry tomato and avocado with Mayo

We’ve bought a whole fresh loaf and had meats, cheeses, pate, salad and olives etc. We’ve sat out in the sun. Lovely.

Ice cream.
Sandwiches.
A tin of bolognese put into wraps with cheese and roasted red peppers from a jar.
Flatbread or baguettes with the roast lamb I have in the freezer.

I'll be having salads with the lot. They taste so much better when the weather is warm.🥗

I know you don't want to cook but I roast a chicken very early in the morning and then we have it cold in sandwiches for dh, with salad for me, and with noodles, peas, mini sweetcorn , mushrooms, peppers, which take minutes to cook in chicken stock for teens.

Tuna pasta bake (,eaten warm not hot )with garlic bread,
Cold ham with lots salad
Baked potatoes,( eaten warm not hot,)with coronation chicken filling.
Lots ice cream and fruit

We had Greek salad for dinner as it was a million degrees here. Maybe tuna sweet corn baked potatoes if your family don’t like salad? Greek salad might be ok though as it’s not “leafy”.

I was just thinking about this as I got so overheated cooking dinner tonight. I was debating making some kind of stew in my instant pot with either microwave mash or rice.

I’m facing the extra hell of a trip to the school uniform shop after school tomorrow so might end up at a drive through on the way back.

Tonight we had hot dogs, crisps and cucumber sticks.Blush

I think we’re having pizza tomorrow.

This week DH and I are having tapas style bits from the supermarket. Tortilla, that sort of thing.

If we were eating with the kids, I’d be looking at deconstructed salad type stuff, chicken goujon wraps, that sort of things.

If you have an Instant Pot you can cook a gammon joint and eat the ham hot, cold or room temperature. Cook the ham and take it out, then use it to steam some potatoes and microwave some frozen peas, sweetcorn, carrots and that’s a good meal and if you do a large enough joint you have leftovers.

Pasta salad (but with no salad!) so - cold pasta, some quickly pan fried chorizo and then tear up cold roast chicken. Mix with something like pesto to bring together. Tip in a jar of olives, or a can of sweetcorn. Eat cold next day.

Spanish omlette. Just an omlette with chorizo and then basically with anything else in it! Mine has frozen peas, cold new potatoes and spring onions. Cover with cheese. Eat cold next day.

Spaghetti puttanesca uses stuff from jars so you only have to cook the actual spag.

I have just cooked a massive batch of pasta and then divided it up into vegi, tuna and chicken pasta to cover the next few days. Also filled the fridge with ready to go snack stuff like pork pies etc so people can go make a plate. There are also frozen baked potatoes in the freezer which can be ready in 10mins.

Honestly...
not seen MIL for 16mths. She's fulfilling her promise of doing Xmas for me as I missed out.
On the hottest day on the year, twas delicious & I love her for it

A bag of crisps a fruit salad and some millionaires shortbread all whilst lying on the sofa instead of going to the gym class I usually go to every Monday. Too hot for life.
