I don’t want to cook for the next few days, what are you eating in this heat?

Me, dh and 2 x ds.

We were going to have a bbq for tea but it’s too hot for that, tea today appears to be ice cream Grin

Looking ahead I don’t really fancy cooking for the next few days!! All but me are salad refusers and dh and ds9 don’t really eat vegetables either which makes summery hot weather foods very hard!

What do you eat when it’s as hot as this?

I have no idea, I am struggling to think of anything to make for dinner myself. I bought some mince to make burgers but the thought of putting the hob on is not appealing! So I am placemarking for ideas Grin

Well I've just polished off the huge roast dinner that my die-hard husband made Grin

But in your position I'd probably stock up on cold meats, bread, pickles, cheese etc.

Pasta and garlic bread is quick and light though too.

I know it's still cooking , but we're having pan fried halloumi , couscous and a salad.
It'll only take ten minutes to make.

Quiche? Chicken Caesar salad (I know that's salad though...) Tortellini is always easy and quick. Will prob do homemade pizzas at some point too.

Cold baked salmon. Tomato orzo. Ploughman’s. Salad Nicoise (self assembly, for the run and some types of veg haters).

Hot smoked salmon, cold roast chicken, avocado, lots of different types of Houmous with tomato salsa, Pitta or oatcakes, mixed bean salad (dressing drizzled in whilst its warm from the microwave), grilled artichoke hearts from the deli counter, bottled sweet peppers. For dessert: lots of berries which are currently at their best, or fresh pawpaw and/or mango or peaches, or thick slices of fresh pineapple with thick Greek yoghurt (or cream/ice cream if you prefer..). Yummy!! 😋

We give up and head for deli counters. Costs a fortune but sits in the fridge for a few days and we do at least get to eat something.

Local farmshop does great scotch eggs, quiche, cold pies and cheese. Sainsbury does great indian wrap things. Tesco has good olives and antipasto -. don't get their mini falafel, they're utterly disgusting.

That and fruit salad with lime juice and ice cream with old fashioned ginger snap baskets - Sainsbury again - and we are all set.

We're having a barbecue but it is literally throw it on, cook it, eat it. No lengthy prep or marinating this time. To me, easy cooking is something I have cooked a million times before and don't need a recipe, so that is largely what we are eating for the week with shed loads of salad 😂

We're another family that were going to have a bbq but it's far to hot so were having burgers,j/potatoes and salad.

Other dinners this week will be Chicken Caesar Salad,Ploughmans,Carbonara and garlic and herb bread,lamb chops,minted new potatoes and veg,Flatbreads,hummus,Greek salad and chicken and veg kebabs.

We're going to go out to dinner once a week for the 6 weeks holidays beyond that I think I'd be happy to live off cereal,cold drinks and Ice Lollies.

DS and I had a cold noodle salad for lunch: rice noodles with batons of cucumber, sharp green apple and carrot, as well as some shredded iceberg lettuce. We topped it with a lime/nam pla/chilli dressing and loads of herbs and peanuts. It was perfect in this weather - the cold rice noodles were both soothing and refreshing!

The last couple of days we have had-

Tuna salad nicoise

Moroccan flat breads with houmous, griddled courgettes with olive oil and thyme , roasted feta peppers and lentil salad etc

Fish platter, mixed salads , tomato salad

Quiche, new potatoes and salad

I tend to make a large lentil/couscous/ pulse salad that lasts a few days with pimping daily when it's running low !

When you say they’re salad refusers do you mean all salad even leaves?

I’m not a fan of tomatoes/cucumber but I quite like a mixed leaf salad with some Caesar dressing.some chicken marinaded in Cajun seasoning with that and you have a Cajun chicken Caesar.

Other than that, sort of ploughman’s, bread, cheese, cold meat, leaves, DP likes pickle and beetroot.

I still have potato salad left in the fridge from last night as we had a bbq so will finish that off as well with maybe some peppered mackerel.
We were going to bbq tonight as well but not sure I can be arsed standing in front of it when it’s been this hot. Besides which my garden is south-facing so it’s not cool enough out there until about 7:30/8:00.

We are having tuna pasta for dinner tonight. Yesterday we had burger and chips with some tomato and mozzarella salad on the side. We eat a lot of quiche-type stuff with potato salad and things during summer. And I quite like a jacket potato when it's hot, with sour cream and cheese.

Sorry, I missed the bit about the rest of your family being salad refusers! Yesterday, we had a recipe from one of the Roasting Tin books that is basically roast carrots and red onions with halloumi and cannellini beans, with a lemon and cumin dressing. It's served on top of salad leaves so is technically "salad", but there's enough other stuff in there that the salad dodgers (like my DC3 Hmm) can still find something to eat. Would something like that work for you?

Chicken Caesar salad.

Singapore noodles

Pasta nicoise

DH braved burger making Friday night.

We had the prawns earmarked for today last night. Lots of garlicky butter and chunks of bread.

So it's picky bits tonight.

The cheese will be the base of tomorrow's tea with bread tomatoes, olives, pickle and ham.

By which time we'll be back at a Luke warm pasta dish, possibly raw tomato sauce, possibly egg yolk and lemon.

I had lettuce ham cheese and chicken satay sticks for lunch no prep just threw it on a plate, i wish i had got some cucumber tho.
Microwave meals ,
Crackers Cold meats, cocktail sausages eg cheeses as said salads pre preped no messing about ,
yogurts, i 2nd the picky buffet style tea!
beans on toast is quick no need put oven on if thats what your trying to avoid.
Cereals , who said you had to have them only for breakfast?
I hear spicy food helps cool you down also

Tuna and bean salad. Whatever tinned or jarred beans you've got in, ok to mix two types, or not, (eg tin of cannelini beans plus tin of chick peas) tin of tuna in oil, sliced spring onions, crushed garlic, olive, pepper and lemon juice. Mix in chopped parsley if you like and black olives (ditto). Toss and serve at room temp.
If you need another salad how about tomato and mozzarella?

I love a salad but DH and DD wouldn't entertain it. We are having pizzas with picky bits (chicken bites, garlic bread etc) tonight cos I can't be bothered cooking.
Pasta is always quick and easy, beans on toast, omelette, dippy egg and soldiers.

We were going to have omelette and sautéed potatoes for lunch but it ended up as potato salad and cold hard boiled eggs.

Had a bbq earlier today, problem solved for me as DP is in charge of man cooking bbq
For later in the week we have got pasta salad, couscous and harissa chickpeas, mezze type things (dips, falafel, hummus, olives, stuffed vine leaves, sundried tomatoes, jarred peppers etc), wraps. If you are near a Lidl it’s Greek week at the moment so they have tins of vine leaves, Greek style beans, antipasti etc.
I have also got muesli for breakfast to avoid toast/porridge 🤣

Roasted a chicken at 8am this morning. Will have that with a salad I made yesterday (cumin roasted chickpeas & carrots. Add dressing of honey, olive oil and lemon juice. Leave to cool slightly. Add pistachios, feta, spinach and chopped mint. It’s amazing). I’ll take it out of the fridge about 30 mins before supper to allow to come to room temp. Also got home made tatziki. Can’t wait!
