Boiled eggs and soldiers

What’s your ideal ratio? I have 2 (large) eggs and 3 slices of (standard shop bought granary) toast. 2 slices isn’t quite enough, 3 slices is a couple of soldiers too many.
Just made it for ds, the eggs were slightly smaller than usual and he said 2 slices of toast was the perfect amount.
Dh just came into the kitchen and said 4 slices is the perfect amount Shock
How do you eat yours?

Sorry if this is a stupid question blush, but what are you doing with the butter if no soldiers? Do you just plop a chunk of butter into the egg?
I generally peel the eggs, chop them up in a cup in chuck in a bit of butter while they're still hot, so it melts. So I'm cheating, really, and having egg-mashed-up-in-a-cup, of 'guckie egg' as it's better known around here.

We have had a lot of double yolkers from these hens and once dh cracked 6 double yolkers in a row! They made our Yorkshire pudding batter very heavy in case anyone wondered Grin

I stand my toast upright so it doesn’t sweat and wait for it to cool down before buttering. Obviously with proper salty butter, none of this margarine nonsense here.

Ahh I see, x post on the eggs with butter.
It’s a bit like egg Mayo but without the Mayo. So… egg butter.

2 eggs, 2 slices of toast for me.

A tip I learnt off MN years ago and it was a game changer (ok slightly dramatic for eggs and toast!)
Once you've spread the butter/marg on the toast, sprinkle salt and pepper over the toast before cutting into soldiers. Bloody brilliant.

From google: "Selectively breeding hens for high productivity, whether larger eggs or larger numbers of eggs, can cause a range of problems such as osteoporosis, bone breakage and prolapse. We need to breed and feed hens so that they can produce eggs without risk to their health or welfare.’"

So while hens do lay different sizes naturally, because there is more of a demand for large eggs and greater profit margin for farmers, this can cause problems for the hens selectively bred to produce consistent large eggs.

@Sparklfairy do you know if it’s possible to tell which companies are doing this and which aren’t? Even buying medium eggs from a company isn’t helpful if they are still trying to get their hens to produce mostly large.

SiobhanSharpe I was always put off duck eggs after reading a story where someone is murdered by cooking them duck eggs. I can't remember the name of the book now, but I think it's the nanny or governess or something who gets poisoned. Or maybe does the evil deed. (Obviously it can't actually be true, or supermarkets wouldn't sell duck eggs! Grin)
I can’t really judge you for this - if there’s a cracked egg in the box, I have to throw it away. This is not for any sensible food hygiene reason, but because someone might have injected it with arsenic. Thank you, Dorothy L. Sayers.

@YelloYelloYello I have no idea, but I would think probably not. From a farmer's perspective, it makes financial sense to try and get large eggs through selective breeding.

I do know that you can buy "mixed size" eggs which implies that maybe this wouldn't be bad for the hens but a lot of people see large (i did too) as the best value so go for those.

In my old house I used to get eggs from a lady who had in laws with lots of chickens and far too many eggs so she used to sell them for them on fb, but then I moved. I'd love to find something like that again!

It never occured to me to have 2 eggs. That would indeed pose a toast conundrum. I cut my bread to fit my egg Grin.
