What do you feed your family in the summer?

I'd happily live off salads but the children won't eat a fancy salad. I'm already bored of chopped fruit and veg with bread and butter and cheese. It feels wrong to be eating spag bol, chilli or curry in this weather.

Kids are 8 and 6 and will eat most veg and most things but nothing to fancy.

Would love to have any recipe recommendations please!

DH and DS1 take it in turns to bbq.
They also make salads.

A roast chook, with new potatoes, baby carrots, asparagus, beans and salad.
Also with steak.
Burgers.
Marinaded teriyaki salmon with udon noodles and stirfried veges.
Greek marinaded lamb skewers with pilaf rice and salad.

Although I've been asked for a maccy cheese and lasagne in the near future. Gak.

Fajitas, burgers, pizza + lots of salad.
Happily my lot also like pots of deli stuff like houmous & falafels, pasta & couscous which makes for a very lazy easy tea.

Taboulleh with everything! Bulgur wheat, plus cucumber, spring onions and tomato's chopped up really small.
Zest and juice of a lime and a lemon.
Good old glug of olive oil.
Lots of salt.

It's an absolute favourite with every kid (and grown up) I know, including the really fussy ones.

Serve with -
Roast chicken
Ribs
Halloumi
Steak
Hunter's chicken
Cold meats
Hummus and cheese

Basically I have it with with everything.

I do a tuna nicoise salad for me and DH and then its very easy to serve it as new potatoes, tuna and egg with tomato and green beans for fussy DS.

Same as winter - salad is awful - never eat lettuce if I can help it!

This week we had
Monday: Chicken supremes with squashed roasted new potatoes and a sort of pea and little gem lettuce in stock with pancetta thing (which does have a name but I've forgotten it).
Tuesday: Salmon, potatoes, asparagus and hollandaise
Tonight: Vegetable stir fry - the sauce was ketchup, soy and chicken stock. We had miso aubergines in ours instead.

We do eat a lot of salads unfortunately!

At least once a week we have gazpacho with some (olive) bread. Usually on the dreaded Tuesday night. I grew up eating this and I love it.

Roast chicken and potatoes covered in white wine, lemon juice, garlic and oregano with salad.
Cous Cous with roasted veg and any leftover chicken the next night.
Baked potato or sweet potato with cold fillings
Falafel Wraps
Chicken or fish baked with a load of seasoning and a massive tub of coleslaw

I try and avoid anything that needs the hob, I like things I can wack in the oven and walk away from, ideally sitting outside while it cooks. Always served with something cold.

@devildeepbluesea no-one in my house apart from me will touch tabboulleh - they literally look at me as if I've served them soil! DH included.

Same as winter, just the balance is more towards cold foods. Still eat curries and chilli and soup though. More salad as there's too much in the garden.

Just batch cook some of their fave meals, enough to cover the week. Then heat up and serve them a portion each and just make yourself salads. They can have a scoop of salad on their dishes if they fancy.

Greek salad and couscous salad (v similar to devils recipe up thread) with mint, coriander, parsley, lemon oil and paprika plus toms. cue and red onion.
We have that with chicken, halloumi, burgers, steak, falafel etc.

Roast chicken with potato salad (and green salad)
Mac and cheese with red onion, spinach and sweet corn salad
Homemade Nando’s - basically spiced grilled chicken, pita bread with salad & corn on the cobs.
Hog roast rolls, with apple sauce, and salad
Charcuterie board (olives, sundried tomatoes, cold meats, cured meats- salami etc)
Picnic food (cocktail sausages, salad, etc)
Tuna rice salad - cold white rice, tin of tuna, and veg you have (eg, tomatoes, sweet corn, cucumber, grated carrot etc) and some mayonnaise stirred in.
Homemade sushi

Piri piri chicken with corn on the cob or Mexican corn, new potatoes, salad.
Salmon, green veg in vinaigrette, potatoes.
Enchiladas.
Meat or fish with broad beans, peas and asparagus In vinaigrette sprinkled with crumbled feta.
Tacos.
Chicken breasts stuffed with cream cheese and chives.
Warm salad of chorizo/ butter bean/ red onion/ spinach
Moules mariniere with crusty bread (follow with fresh berries/ melon/ pineapple as there’s no veg!)
Tapas style food.
I would also do quiche and salad/ frittata and salad if dd would eat eggs. It’d be Greek salad though as the dc aren’t into lettuce!

Place marking as I get stuck in a rut.

We have jacket spuds regularly (every Tesco delivery day normally!) but having the oven on for an hour this time of year isn't great. Last night the Tesco delivery guy suggested tuna pasta salad, and so that's what we had Grin. Kids loved it too.

DH always needs topping up with bread and butter if it's not a substantial meal though.
