Our household seem stuck in a dinner rut. Desperately seeking inspiration for the upcoming summer months 🌞

We have got some nice chicken kebabs from the butcher's and going to potentially BBQ them tonight (weather dependent) or just grill them with some rice and veggies.

Then I'm a bit stuck, we were away for the bank holiday and haven't really got back into the swing of it. Ended up going out for dinner last night instead.

I think there will be a coupe of stir frys this week for easiness.

I know what you mean. We had plans all weekend and due to be away this weekend so it was a bit all over the place. Weekend away now cancelled thanks to isolation but everyone feeling well so hoping for a few nice meals at home plus quick midweek inspiration.

Kebabs sound lovely

Arabian spinach: sautee onions with some cumin seeds. Add minced garlic and a bit of salt. Add chickpeas. Add spinach and cook until wilted. Add a pat of butter. Easy, healthy, delicious, no need to turn on the oven!

I bought salmon (marinaded) salad and baby potatoes

Also turkey burgers - probably with wedges. I have never cooked these.

I have Thai curry ingredients bought too

Other than that I tend to wing it - I have things like bolognese and shepards pie and lasagne in the freezer. Some shop bought and some home made.

Salads! Made a roasted squash, chilli and feta salad with hummus dressing earlier in the week and tonight is flaked salmon, broccoli salad with a garlic/anchovy dressing. Trying to avoid the oven as much as possible, although a lot of my salad plans involve roasting things first Grin

Yesterday we had Chinese pork spare ribs in a sauce with green pepper and peanuts. Served over rice.

The day before we had a couscous salad with roasted chicken breast and med veg with lots of herbs and spices.

Previously we had tandoori lamb kebab with naan and raita.

Before that, nachos made with tortilla chips, leftover portion of chilli, lots of cheese and sliced jalapeños. Served with fresh guacamole, plus cucumber, tomato, spring onion and coriander salad.

Tonight we’re going to have burgers. We keep it very simple, to let the beef shine - lettuce, pickled cucumber, thinly sliced onion, ketchup and mustard.

Tomorrow I might do crispy chicken legs and potato wedges with a ranch style dip, or maybe a potato salad.

Saturday we might have quiche and salad, depending on what the weather’s like. If it’s a bit cooler we’ll probably do a curry.

Sunday i think I’m going to make crispy duck legs and pork gyoza, with a carrot and cabbage salad on the side. I’ve never made gyoza before (been meaning to for ages) so if I’m not feeling confident on the day I’ll probably switch it to pasta instead!

We've been trying to have 6 out 7 days meatfree and this week I've had 3 HelloFresh recipes which actually have been lovely. Veggie rigatoni bolognese, chermoula spiced halloumi and bbq mushrooms in a bun with wedges. All 20-30 minutes to make.

I made homemade beef burgers last night and have pork mince out for tonight.

What on earth am I going to make with pork mince? I'm sick of meatballs for now. I need inspiration. HELP!
Like you, OP I'm in a huge dinner rut. Same stuff week in and week out. I've been going through my Hairy Bikers cookbook but very few recipes are new to us. (And some of my own versions are better!)

I am all about marinated grilled meats, fish and salads this week.

rosemary lemon and garlic grilled lamb
cajun salmon
that sort of thing.

I do what i call 'super salads'. green leaves; cherry toms; cucumber; sliced beetroot; sliced yellow peppers; strawberries; dried fruit; pumpkin seeds; walnuts; avocado; grilled halloumi; and then whatever dressing I want.

It's no wonder I am a chunker!

Like you, OP I'm in a huge dinner rut. Same stuff week in and week out. I've been going through my Hairy Bikers cookbook but very few recipes are new to us. (And some of my own versions are better!)

I know you have already done burgers but you could mix the pork mince with some apple sauce ' fruity chutney and make those into burgers?

Otherwise I have no idea as I never cook with pork mince so I shall be intrigued at suggestions!

Yes I’d do something in lettuce leaves with it too, either Korean or Thai.

That’s what I’d be doing with pork mince if I hadn’t planned gyoza.

Balsamic tuna steaks with salads
Cajun chicken skewers
Roasted veg and bacon fritata
Fennel and nduja spaghetti
Baked butternut squash falafel in pitas with mint and yoghurt dressing.
Harissa crumb topped cod with green veg
A really quick stirfry with pineapple, water chestnuts and bamboo shoots, chilli and mango sauce and rice noodles and cashews for those who like them (which is certainly not me!)

Ohhh yummy I love a sausage and bean casserole. I also really like chicken, chorizo and butter bean. Might put that on the menu for next week. Although I could skip the crispy duck legs and do a cassoulet instead. Hmmm.
