Our household seem stuck in a dinner rut. Desperately seeking inspiration for the upcoming summer months 🌞

I would use the pork mince to make a big stir fry/dan dan noodles type dinner, or mix it with some minced chorizo and make meatballs or a lasagne filling. Most recipes that use any type of mince will be fine, just adjust the seasoning.

I forgot all about dan dan noodles and that’s one of my favourite dishes! But I suppose you do need to have all the ingredients to hand...

This week we have had king prawn sweet and sour curry,spaghetti Bolognese,spicy chicken wings,new potatoes and salad and tonight it's ham,eggs and beans on toast.
We also tend to have same stuff on repeat,so curries,stir fry,fajitas,stuff on toast or baked potatoes. It's too hard to try and please all three.

Mine for the next week (starting Saturday) is
Saturday: mushroom and lentil spag bol
Sunday: tofu chickpea stirfry and satay sauce
Monday: warm lentil salad with tahini dressing
Tuesday: jackfruit burgers with wedges
Wednesday: jerk sweet potato curry with rice and peas

Recent successful meals:

Slow roast salmon, pasta salad with courgettes, walnuts, and leeks

Pasta with anchovies, tomato paste and caramelised shallots

Pork belly strips with lots of cut-up raw veg, coriander, and spring onions dressed in sesame oil and soy sauce - eaten in lettuce wraps

Roast chicken and leeks, accompanied by boiled new potatoes, radishes, asparagus, green beans and homemade garlic mayo

Nigella's chicken & chorizo traybake, green salad and bread alongside

Roast chicken stuffed with stale bread, tomatoes, feta, fried onions and oregano - potatoes roasted with lemon alongside, and a greek salad

(These meals are interspersed with fish finger sandwiches, takeaways, and eating out!!)

Tonight we're having Thai green curry which I just finished making (I buy the green curry paste, who has that kind of time?). Tastes lush, I've had to put the lid back on now it's cool to stop me helping myself!

Tomorrow is Friday so takeaway night yay!

This week we've had paella and pasta bake and can't for the life of me remember what Monday was. It's our "easy" week as I get a treatment once a month for my neurological disability and I'm very tired in the run up to it (tomorrow!!).

So I've "cooked" this week but that means mainly pointing at things and stirring while teenagers do the grunt work. I tell myself I'm teaching them to cook. They need less pointing than the used to!!

Today prawn Kerala from the quick roasting tin book - a tray bake.
Yesterday baked sea bass parcels and vegetables.
I'm also making vietnamese pho from some homemade chicken stock.

On hot days, we might just have a large salad instead of a hot meal, or with say grilled fish or chicken:

  • Chicken ceasar salad
  • Watermelon and halloumi salad
  • potato salad
  • Salad nicoise with either tune or mackerel

Thanks for the inspiration, I was seriously lacking yesterday and in the end we had fish and chips! Blush

This weeks plans now include
Prawn and chorizo linguine
Homemade pizza and salad
Lemon chicken with butterbeans and spinach
Chicken, spinach and ricotta cannelloni with salad
Fajitas
Garlic, chilli and soy chicken stirfry
