Inspire me! I have spent all morning trying to work out what to have for dinner and I literally have no idea.

Something quick and simple would be amazing

Tray bake, I'm using Lincolnshire sausages, or you could do it with chicken thighs or drumsticks. Charlotte potatoes tossed in oil, sea salt and Rosemary, green peppers sliced in large pieces, halved tomatoes, brown onions halved. All shoved in the oven on the same tray for around 40 minutes or so.

Trying a new recipe tonight - cauliflower and chickpeas with spinach, mixed with olive oil and spices, and I've got a dressing to make for it... keeping my fingers crossed - the green roasting tin usually doesn't let me down!

We’re having sticky chicken (mix of hoisin sauce, light soy sauce and honey) with stir fried veg (spring onions, peppers, baby corn and sugar snaps) and basmati rice. Toasted sesame seeds, chopped spring onions on top and prawn crackers to serve.

DCs fav meal, very tasty and it only takes about 30 mins from start to finish.

Tomato tarts. They are quick and simple: unroll puff pastry, spread on sun dried tomato paste, chop tomatoes and put them on, throw on capers and a bit of olive oil and balsamic vinegar, bake. Boil new potatoes and veg.

Roasting a chicken and trying a new side that I saw on the NYT Food website - cheesy hasselback potato gratin. I love anything that involves potatoes, cream and cheese so can't wait for dinner time!

Oven baked salmon seasoned with black pepper, mixed herbs, powdered chicken stock and a couple of knobs of butter.
Serve with new potatoes and vegetables or jacket potato

Aforementioned Instapot is great if you often lack both time and inspiration for dinners - you can make heaps of a dish and freeze it for another day, or cook up a whole meal in an hour in the day.

Rendang chicken curry - I use all the old veg and a jar of paste with coconut milk. Quick, easy and my DC eat it without making a drama about the vegetables!

Sticky chicken thighs with brown rice. Dh works his magic with the chicken, but there are lots of Chinese spices, hoisin sauce, honey, green peppers and cashew nuts involved, cooked in the oven as a tray bake. It's lush!
