What’s for dinner tonight? (Vegetarian)

I decided to go veggie a couple of weeks ago and I think that’s definitely it for me, I won’t go back to meat and fish again now.
I love cooking and cook a variety of meals but always looking for new recipes and could do with adding some more to my new veggie collection!
Tonights’ tea is sweet chilli halloumi flatbreads with some salad, home made hummus and either chips or rice.

Bosh roast sweet potato tagine (mine is made with a mix of sweet potatoes, parsnips and carrots) with cous cous and salad. It’s easy to batch cook and freeze.

Tonight's dinner has been making my stomach rumble for hours as it's a slow cooker bean chilli.

Last night we had McSween's veggie haggis with mash and cabbage - all my family love it!

Well, tonight’s dinner is a no effort one - quorn escalopes with veg and fresh mash (from the supermarket). I will steam the veg myself at least Wink.

Tomorrow I’m making aubergine & chickpea curry. I’ll do a double batch so one for the freezer. We’ll have it with naan and probably some bhajis/pakoras.

I second the veggie haggis! With carrot and swede mash and colcannon. Comfort food!
Tomorrow I'm having cous cous with roasted Mediterranean veg (just a tray from the supermarket). When they are almost cooked I'll crumble over some feta and let it melt a bit.

Homemade - don't buy jars of pasta sauce anymore. I am making 3 cheese pizzas as well. But I get DS to do the toppings and the bread maker does the dough so it is easy.

We are just having a stir fry today, in a rush and I need to use up some stuff - Quorn chicken style pieces, carrots, leek, Kohlrabi, very random Grin. With noodles or rice depending on what I have in the cupboard.
