What’s for dinner tonight? (Vegetarian)

I decided to go veggie a couple of weeks ago and I think that’s definitely it for me, I won’t go back to meat and fish again now.
I love cooking and cook a variety of meals but always looking for new recipes and could do with adding some more to my new veggie collection!
Tonights’ tea is sweet chilli halloumi flatbreads with some salad, home made hummus and either chips or rice.

Remus it's so easy. I use the microwavable puy lentils and just mix with some honey, garlic and a bit of orange juice. Parsley if I remember. Vacuum packed beetroot chopped up and dry fried slices of halloumi. I sometimes buy a Spanish omelette to go with it.

Smoky red lentil burgers from one of Jack Monroes books. A surprising hit with both husband and son, now part of the regular meal rotation. Usually batch prepare and freeze a load which is always a winner.

Delicious. Will definitely gives it a go. Sounds as if it would be nice with feta too, which would be even easier. I don't like the supermarket Spanish omelettes, unfortunately, but might be nice with a big baked potato!

Veggie shredded 'duck' with brown rice and veg, not veggie but I really enjoy the 'duck'

Cheating because it was Hello Fresh, but it was roast sweet potato chips with a red lentil and red kidney bean chilli and a fresh salsa on top.
Also had rigatoni pasta with a creme fraiche cheese and spinach sauce from them this week.

Mushroom and cream cheese spaghetti. Just cook the mushrooms in a pan and mix in a blob of cream cheese then add spag and some spag water.

I've got a chickpea and potato curry with spinach and red peppers cooking to go in the freezer. www.olivemagazine.com/recipes/vegan/spinach-chickpea-potato-curry/ This recipe, I only added peppers because asda sent us 9!

This is what we had yesterday.
I use carrot and cucumber strips for the quick pickle veg and use broccoli instead of green beans sometimes.

@RemusLupinsBiggestGroupie I don’t really like pre cut fruit/veg but pre cut mango is all I go for mango wise, I can never seem to get much fruit from a fresh one!
@PastMyBestBeforeDate that sounds so tasty! Will give that one a go during the week!
@FreezerBird love jack monroe! I really should get one of her books, it’s amazing what she does with tinned food!
All such great ideas though, so many new things to try! Smile
