What's your favourite salad?

I'm on salads atm as I'm trying to lose weight and am looking for some inspiration.

My favourite salad is mixed leaves, cucumber, tomato, red onion, avocado & coriander, or greek salad with feta and olives.

For the last few days I've been having romaine lettuce, komato cherry tomatoes, cucumber, red onion, radishes, gherkins, and green chillies with tuna/sweetcorn/mayo or omelette.

I do love a salad but they can get very samey.

Chick peas with feta, red peppers, cucumber, (sweetcorn), olives onions and fresh spinach. With a simple vinaigrette.

A nice beetroot lambs lettuce and spinach mix lettuce, grated carrot, spring onions, finely shredded peppers, tomatoes, a nice homemade or deli coleslaw, warm grilled chicken, and caramilsed red onion & pineapple, rice or new potatoes and sweet onion dressing. Sprinkle of seeds on the top.

You won't like my favourite salad if you're on a diet (unless you're low carbing!) but I love a whole chevre blanc goats cheese, grilled, with chopped cherry tomatoes and rocket, with a little sweet chutney. Lovely but not very salad-y really.

I also find that light Pizza Express dressing (you can buy it in the supermarket) makes all salads nice, even plain lettuce. I think it's the dressing rather than the particular salad bits you use, that turn it from ok to great!

Leaves, prosciutto, peaches, halloumi and toasted pine nuts with balsamic dressing.

Or roasted cubes of butternut squash and sweet potato (chilli oil and garlic granules), leaves, mozzarella pearls and semi dried tomatoes with the oil from the tomatoes drizzled over for a dressing.

(Yummy but not too healthy!)

Sorry reading all your lovely ideas and after finding a long stringy red vein thing in the fresh tuna I'm now concerned it was a worm 🤢. DH insists it's a vein and I'm being stupid!!

Does fresh tuna have red veins in it or am I going to have to drink some dettol??

Yes they do. Caused by thrombosis due to human cleaning materials flushed out to sea, eg dettol.

My favourite is just a simple Greek salad with lovely feta, olives and tomatoes. Delicious.

A really good tuna nicoise (can never make it myself but have had some great ones in restaurants)

At home I like shredded iceberg lettuce with a chicken leg, pineapple chunks and crispy onions

Also baby leaves with salmon, mayo and shredded beetroot

Another salad I make from time to time - copied from a hotel menu - is shredded duck salad with hoisin dressing.

I roast a duck and shred it when it's cold. We get enough off a duck for two meals for dh and me.

The salad is rocket and other green leaves, orange segments, toasted pine nuts, croutons, and the shredded duck, with the dressing on top.

The dressing is some hoisin sauce, a bit of rice wine vinegar, some sesame oil, a bit of soy sauce, and some orange juice - I squeeze the leftover orange when I've cut out the segments.

I'm trying mozzarella, cherry tomatoes, avocado dressed in pesto tonight. I forgot the basil though!
