Chicken fillets - please just tell me what to do!

Sprinkle some herb, paprika, salt and pepper on them, cook in oven with small amount of oil. Serve with new potatoes and peas.
My kids love that. Bit of mayo on the side!

Pound it flat and thin and make a pizza by topping it with tomato sauce and cheese then cook in the oven for about 15 mins. Serve with a salad.

Cut into bite sized chunks, season and fry briefly. Set aside. Put 150ml of stock, 150ml of white wine or white port in the same pan and reduce by about half. Add 300ml* of cream and simmer for a few minutes until thickened slightly. Pour over the chicken and bake at 160c for 20 minutes.

*use different amounts based on how much sauce you want but use the same proportions - stock + booze = cream.

** I sometimes add in chunks of camembert or bacon or mushrooms or spinach to the chicken before I add the sauce. Whatever's to hand!

Salsa chicken.

Chicken in high lipped baking tray. Chuck on a tub of shelf stable tomato salsa. 5 minutes before it’s done, scatter on sweetcorn, crushed tortilla chips and top with cheese and jalapeños (we use spring onion though).

Serve with oven chips, coleslaw and salad.

I was at a loss for something a few weeks ago and had a jar of salsa staring me in the face so improvised. The kids wolfed it.

dice your chicken and fry it off til cooked through. meanwhile boil pasta, add brocolli about half way through the pasta being cooked (chuck it all in the same pot), then mix everything through with a couple of teaspoons of pesto per person.

This is the sort of thing my children like, I usually have a couple of sachets of the Nando's marinade in the cupboard - pretty cheap from supermarkets, but I'd otherwise just chuck spices or something at it. Folded flatbread or pitta, salad, chips and rice...

Chicken chow mein? Marinade chopped chicken in soy sauce, 1 tbsp sesame oil or veg oil, couple of crushed garlic cloves and tsp 5 spice for 30 minutes . Stir fry, add veg then 1/4 pint chicken stock from half a cube and 1 tsp corn flour. Serve on egg noodles.

Butterfly them and fill them with cream cheese with different herbs and seasoning (Oregano, lemon zest, garlic rosemary, paprika whatever you like!)

You can then eather slow roast them or wrap them in prosciutto (bash them a bit to flatten them for frying) and fry them.

Serve with butter and rosemary baby potatoes (parboil them then finish off in the oven) and a Greek salad.

Homemade nuggets, with chips and beans something so easy and simple can be really tasty and such a change!
