Chicken fillets - please just tell me what to do!

Please can someone just tell me what to cook for dinner with this chicken? SO sick of deciding

We have pretty much everything in the cupboard

You could do this if you've got some plain yoghurt in the fridge, salad & wraps or pitta bread. I'm doing them tonight, they're lovely. I don't skewer them because Dh has dropped all my skewers down the side of the cooker.

Coat chunks in tikka spices, skewer them and grill. Serve in flatbreads with salad and a yoghurty sauce (we make tzatziki, homemade tzatziki is amazing!).

This is brilliant. I cut chicken breasts in half and use them instead of chicken legs, because you get far more meat and we don't like chicken legs much.

Slice in half in to two thinner fillets, season with anything you fancy, then fry off and have chicken burgers in ciabatta buns with some yummy flavoured mayo. Had this the other day and it was so yummy (used M&S chicken seasoning and some cayenne for a bit of a kick).

I cut them into thinner fillets and can do so much with them, and not have them dry out. Flour and pan fried in a little oil, add mushrooms and wine and a little flour to thicken. Make a little stuffing with loads of garlic ( I buy extra bagged, dry stuffing at the holidays and use it for chicken and fish) wrap a thin fillet around the stuffing and bake. Pour hole daisy or gravy over. Make curry! Or baked chicken fingers, coated with crumbs or panko. We don’t eat beef or pork, so we have a lot of ways of preparing chicken.

I'd do egg fried rice with chicken. Either dice and fry the chicken (less washing up) or breadcrumb it and oven bake.

Satay?
Fry with veg, add a good spoonful of peanut butter, tbsp soy sauce, 1/2 tbsp honey and some chilli powder. Leave to simmer until chicken is cooked then serve with egg noodles tossed in soy sauce

Thai green curry. So easy. All you need is the chicken, decent jar of thai curry paste, can of coconut cream, red pepper, baby sweetcorn and mange tout or green beans. And jasmine or biryani rice. Maybe a squeezeof lime to serve.

Fajitas (that's what we're having for dinner)
Biryani
Spicy rice (either cajun or use chorizo for flavour)

Stuff them with cream/mozzarella and herbs, wrap them in Parma ham and pan fry them in equal parts stock and white wine. That’s what we’re having tonight.

We've cut ours into chunks tonight, marinaded in natural yoghurt, garam masks, chilli and lemon juice, will grill on skewers and serve with toasted pittas, salad and coleslaw. Kind of a chicken kebab

Slice in half then fill with sun dried tomatoes and mozzarella, maybe some pesto too if you fancy then wrap in Parma ham and bung in oven till they’re cooked. So tasty!

Crispy chicken strippers;

Cut into strips, dip into beaten egg, then coat in seasoned cornflour (I add paprika to this). Then fry. Makes very crispy nuggets.

Slice them open length ways, put in some mozzarella and green pesto and wrap it in bacon. Goes really nice with some cherry tomatoes.

We use the chicken mini fillets. My children love lemon chicken, I make a sauce of lemon juice and zest, honey, olive oil and garlic, then bake it in the sauce. Serve with Basmati rice with peas and scrambled eggs and steamed spinach. Or curries, or Mediterranean pasta dish with tomatoes and olives etc. Sometimes we do chicken in Parmesan and parsley breadcrumbs like chicken nuggets (I put the crusts of loaves in the food processor every week so there is always a bag of breadcrumbs in the freezer).
