Life is chaotic and busy right now, could really do with spending as little time as possible cooking yet would still like healthy and hearty meals.. so ofcourse what better platform to ask on than MN!

Hit me up with your ideas please - what are your absolutely favourites for quick and tasty satisfying dinner?

Ooh, just tonight I made nigellas golden egg curry and it was amazing. It was quick though because I buy frozen chopped shallots/garlic/ginger.

Pasta, chopped cooked sausages, whatever veg you want chopped. Stir through red pesto.

Tray bakes, chop up veggies tonight I did potatoes, carrots, onions and parsnips and roasted, chucked on some sausages for the last 30 minutes. Sweet potatoes, butternut squash, beetroot also work as does chicken pieces

Stir fry veg with noodles and sauce. Add whatever meat / tofu etc you like to the mix. Can be from pan to plate in 15 minutes.

In a big pan or wok, fry a sliced chorizo ring until starting to brown. Drain off excess grease then add 2 sweet peppers cut into chunks. Cook for 2 mins then add a small tin of chopped tomatoes and a squirt of garlic paste. Stir it all together and heat through, then add 2 portions of cooked new potatoes and a bag of spinach. Cram the lid on and cook until the spinach wilts down.

Dead easy and yummy. Not the most elegant-looking plate of food but it's a favourite in our house.

Spaghetti and meatballs.

Meatballs (I buy ready made ones)
Carton of Passata
Jar of red pesto or jar of tomato and macerpone pasta sauce
Garlic granules
Italian herbs
Mozzarella

Bake or fry the Meatballs until browned
Mix the other ingredients and pour over the top then tear up the Mozzarella and put that on top. Bake until Mozzarella is golden. Serve on spaghetti/pasta.

So easy and quick. I have made it with the Meatballs raw and mixed the sauce in the dish before putting them in, it just takes longer to bake and you have to keep checking they aren't raw, so I cook them first and accept I'll have to wash up the jug/pan I did the mixing in.
Sometimes add a dash of Worcester sauce or pinch of chili flakes/smoked paprika.
I also make it with half a pack of soft cheese and the red pesto, but have to heat the sauce in a pan to melt the cheese. It is heavenly that way though.

Pan fried salmon - season with salt, lemon zest & parika first. When fish is cooked cook 3 bean stir fry mix in same pan. Quick, tasty & healthy

Salmon pesto linguine- put salmon in foil parcel, spread with a little pesto, add halved cherry tomatoes & some basil. Can add prawns too. Bake in foil for about 20 mins. Stir flaked salmon & juices through cooked pasta

We're quite an adventurous household when it comes to food.. which can be just as much a curse as a blessing! Adventurous ideas always welcome..

A big old stir fry. Chop up peppers and onions (or use frozen ones like me) and cook in olive oil in a big frying pan or wok. Add a tin of tomatoes and whatever seasoning you like - herbs, garlic, chilli, ginger etc (I use the lazy jars). Cook it down for 5 mins. Then add any cooked meat until warmed through. You can of course cook the meat from raw before you add the tomatoes but we usually have some leftovers knocking around in the fridge. Serve with rice, new potatoes or noodles.

Easy cheesy pasta. Literally just stir Philadelphia into hot cooked pasta. The Philadelphia with chives in is the best one. Add some ham or bacon if you like. My lot like it with peas and sweetcorn stirred in as well.

Quick curry. Fry chopped chicken and onion. Add a tin of tomatoes, a couple of teaspoons of curry powder and coriander if you like it. Cook it down for 10 mins then add a couple of tablespoons of natural yogurt just before you serve it. We like it with rice and peas.

Have you got a decent sized freezer? I batch cook for those nights so all I need to cook is some fresh rice or pasta.

Otherwise, pasta dishes and stir fries are best quick meals.

I forgot to post the daal recipe I post on pretty much every thread...takes about twenty minutes from start to finish. I’ve mixed up a jar of the spice mix to save on measuring them out individually.

Stuff a chicken breast (preferably with skin on) with garlic boursin and bung in the oven for 30 minutes. Serve with tagliatelle and pesto.

Note that you didn't ask for healthy dishes! Alternatively, there are a few here which might involve more veg...

We're also quite adventurous so try to keep plenty of variety. In the last couple of weeks the quick meals we've had are Shakshuka, Ramen with leftover roast chicken for speed, cajun salmon tacos, carbonara, Jamie's quick salmon en croute, Sausage tray bake. I've also started getting a simply cook box every month or so to try new things, most are done within 30 ,mins and as they are only spices not fresh ingredients i don't feel restricted if we don't fancy something.

Pretend carbonara
Cook linguine (or spaghetti but linguine much nicer) for 10 minutes

Meanwhile:

  • chop an onion
  • chop up a few slices of bacon
Fry these till well cooked Add dried mixed herbs, lots of garlic (I squeeze a good couple of inches of garlic puree in) Turn heat off, pour in double cream and mix up, really get all the flavours mixed together

Drain linguine and return to pot. Empty the frying pan into it. Mix up, add Parmesan and mix up.

Serve with more Parmesan Smile

5 ingredients/15 mins
Start your pasta cooking.200g conchiglie
Fry 75g pancetta or bacon in oil till crispy then add 2 sliced leeks, when softened add 250g sliced chestnut mushrooms and fry until softened, turn heat down and add 300ml creme fraiche, ladle of pasta water.
Season and serve

Greek chicken in flatbread

Chop up chicken onions mushrooms and peppers - fry off with oregano , cumin, chilli and garlic to taste .
Boil green beans / make a Greek salad depending on choice
Warm up flatbreads in oven
Assemble ! Serve with lemon wedges and tzatziki

Fry off an onion and some garlic. Add chopped chorizo. Teaspoon of paprika and a pinch of cayenne if you like heat. Add some red/yellow pepper. Tin of chopped tomatoes and some stock. Simmer down, the add a tin and of butter beans. Serve with cous cous.
Pasta and homemade pesto with mascapone cheese and broccoli whizzed through too.

Frozen peas, veg (potatoes, carrots, leaks all work) and chicken thighs. Some stock. Season. Garlic. Bake in oven until cooked through.

Easiest one is:
Put chicken portions with skin on in a roasting tray with baby potatoes, baby (or cut chunks of) carrots, shallots, tomatoes, olives and garlic cloves. Pour over a glass of wine, add some fresh rosemary and thyme, salt and pepper and bake for 35-45 minutes. Serve with salad.
Prep time - about 5-10 mins.

Cook pasta and steam some petit pois on top as it cooks. When cooked, drain it and stir in a tub of garlic and herb cream cheese, some chopped smoked salmon, squeezed juice and zest of a lemon, black pepper and the peas.
Prep time about 10 mins again.
