Quick and tasty week might dinner recipes please

Life is chaotic and busy right now, could really do with spending as little time as possible cooking yet would still like healthy and hearty meals.. so ofcourse what better platform to ask on than MN!

Hit me up with your ideas please - what are your absolutely favourites for quick and tasty satisfying dinner?

I'm an excellent cook and cook nearly everything from scratch most of the time. But I also work 3 days a week in a frontline role, have two small children and a husband who works 50 hour weeks.

On my working days I often cheat.

I would like to say that my cheat days are always managed by the 'Batch Lady' method, which is basically make and bag everything up in advance and then reheat as needed, but some days when plans don't work out these are my go to 'home cooked and hearty' ready meals.

  1. Bag of fresh pasta and fresh tomato and mascarpone sauce from any supermarket - usually get both on a 2 for £2.50 type deal.

If you like bacon lardons chuck some in a hot oven as you put the water on to boil. Boil pasta until ready, add sauce, Chuck lardons on top and grate cheese on top if needed. From switching on the cold oven to plate in less than 15 mins.

  1. Pack of sausages in the oven/ on the grill/ pan. 2 tubs of microwave mash in the microwave. Serve with frozen veg and gravy granule gravy.
  1. Bacon egg chips and beans
  1. By some miracle Set oven on a timer in the morning to cook baked potatoes ready for 6.30pm. Serve with fillings of your family's choice.
  1. Mushrooms and those thin frying steaks, sliced and flash cooked in a pre made peppercorn sauce and a few glugs of milk and served with microwave rice for 'stroganoff'. Alternative flavoured sauces can be used.
  1. Reheated Premade chilli with microwave rice, lots of cheese and a bag of tortilla crisps.

Chicken fillet, wrapped in bacon, jar of BBQ sauce, in the slow cooker. Serve with mash and veg.

A whole chicken. Then mix together 1 tbsp smoked paprika 1 tbsp brown sugar, 1 tbsp garlic granules, 1 tsp salt, rub mixture over chicken. Place in slow cooker on top of halved baby potatoes. Cook for 4 hours in low, 4 hours in high. Delish.

Chilli wraps. Place warmed chilli in centre of a tortilla. Fold sides over to cover. Sprinkle with cheese, grill till bubbling.

A Thai curry is so easy. Fry yellow/red/green curry paste then add onions and meat or tofu. Pour in coconut milk and some fish sauce, then put in any vegetables you like to cook in the mix for a few minutes.

Serve it as soup as is (low carb) or add cooked noodles for a curry noodle soup. Or cook rice and have it as a loose curry with rice.
