I am trying to be more organised, not waste food and to cook cheap but nourishing food as i am on an economy drive.

Monday - sausages, eggs, grilled tomatoes and baked beans.

Tuesday - pasta pesto with black olives

Wednesday - chicken boodle soup (using up roast chicken I have in the freezer plus frozen carrots and broad beans.

And there I am stuck!

I'd love to know what you are planning!

Today - quiche (made yesterday)
Tuesday - oven-baked ham and leek risotto
Wednesday - pork and apple burgers
Thursday - butterbean and vegetable crumble
Friday - tuna fishcakes www.princes.co.uk/recipes/recipe-simple-tuna-fish-cakes/
Saturday- egg fried rice

tuna fishcakes also- I have a couple of tins that are lingering in the cupboard!

Next few days for us:

Shepherd's pie - topped with cauliflower cheese instead of potato. Additional veg
Scrambled eggs and ham.
Mushroom risotto
Sausage casserole served in large yorkshire puddings
Sweet and sour chicken, stir fry veg, rice

-Egg curry, rice and cabbage with peas
-Sausage and mash
-Chickpea, chorizo and spinach stew with flatbread
-Pasta with random veg traybake (we get a veg box)

  • Chicken and orzo pasta (I forget the exact name. It’s a Rick Stein recipe).

-Left over roast pork, mash, Yorkshire’s, carrots and sprouts
-Chicken satay, rice, salad and naan
-Pesto pasta, salad and garlic bread
-Cheesey twice baked potatoes and salad
-Honey and orange baked salmon, cous cous, broccoli and mange tout

Today - Corned beef crispbakes and baked beans
Tomorrow - pizza
Wednesday - fish, potatoes and salad
Thursday - cottage pie
Friday - beef rib ends in bourbon bbq sauce, mash and veg
Saturday - teriyaki chicken stir fry
Sunday - rosy chicken

Jack fruit tacos ( veggie DD2 cooking)
Support your local restaurant night (DD1 turn to pick).
Potato and pear salad with chicken.
Pizza, ( love my air fryer pizza attachment)
DH turn to cook, usually sausages and mash or baked potato

I prep and freeze as single

Cottage pie (have mince in freezer) 4 portions
Sesame chicken (gousto recipe) which uses thighs so cheaper 3/4 portions
Veg and pancetta pasta bake (uses up odds and ends of veg) 4 portions
Omelette (using up Christmas cheese and ham!) for a lazy tea

Monday: vegetable chilli
Tuesday: creamy leek and mushroom pasta
Wednesday: fish fingers and waffles for DC, I am at work, don't know what DH will make himself
Thursday: pasta with a tomato and olive sauce
Friday: pizza

Today- Mexican cobbler with polenta dumplings
Tues: butter bean, leek and chorizo bake
Wed: chicken sausages and mash & cauliflower cheese
Thurs: Nut roast
Fri: curry night - lentil dal, chicken curry, lemon rice and kachumber and naan breads.
Sat lunch: Indian street omelette with leftover above
Eve: chicken cacciatore
Sun lunch: cheesy potato whirls
Eve: roast gammon, roast potatoes, red cabbage
Various veg for all the above that I haven't planned yet (veg box - it's fun to try new side dishes).

all lovely. I had forgotten about chicken cacciatore. That used to be a staple.

Does anyone have a good recipe for tinned salmon that are not foshcakes? (That;s all I can think of!).

I also have some teriyaki chicken in the freezer I had forgotten about. :)

salmon hash is a great way to use tinned salmon.

Yesterday we had large skewered king prawns in a coriander and chilli sauce (2 each), along with roasted Romano peppers stuffed with leftover basmati rice topped with a few smaller king prawns, lemon, spring onion, parsley, red chilli, garlic, black pepper & drizzled with olive oil.

Today we’re going to have ham (we did our Christmas ham yesterday), egg & homemade chips.

Tomorrow we’ll have leftover lamb curry with rice & dahl & maybe some flatbreads.

Wed: Teriyaki tuna steaks with a noodle salad

Thur: Pork goulash

Fri: Jacket potatoes or wedges, chilli, avocado & pico de gallo

Sat: Korean chicken and mushroom stew

Sunday: Roast

Not really planned this week as DD is still at home and seriously fussy. And I have plenty of chicken and fish in the freezer.

Mon - turkey chilli (mince is defrosted for DD to make this later)

Tues - maybe something with salmon fillets

Wed - maybe chorizo potatoes

Thurs - maybe a chicken chasseur type thing for DH and I or some kind of roasted chicken drumsticks, DD making a stirfry for herself.

Fri - takeaway

Chicken cacciatore (kids find this one less strong. I cook everything first then blend it to hide the evidence of Bits Of Onions etc before adding the chicken and cooked prosciutto.
