Pickled beetroot - ideas

I adore pickled beetroot and eat it out of the jar with a fork. It’s my Christmas treat!

I also pair it with soft goats cheese (may have just eaten a whole block).

So for purely boredom reasons, can you give me any tasty pickled beetroot combinations I should try with my very large jar Grin

Anything you would eat pickled red cabbage (pickled food of the gods) with you can eat beetroot with.

I have a good recipe for borsch (Russian or possibly Muscovite-style soup). You soften cubed potatoes, carrots and maybe some cabbage, add stock, flavour with pepper and allspice, and then when the veg is soft, you add in cubed pickled beetroot, sour cream and chopped dill. Some people add in minced garlic towards the end too, or if you don't like raw/lightly cooked garlic, you can add it at the start when you put in the veg. It's really good 'January' food after too much rich Christmas stuff.

This salad is one of my favourites:
red onion - diced
cucumber - de-seeded and diced
pickled beetroot - diced
lemon juice
flatleaf parsley

I like it with any sort of cheese pie/quiche/fritter

Or you can add feta to it and turn it into a main course salad with a baked potato, or stuffed into toasted pitta bread

I am getting the slow cooker out and deffo making something hot and savoury to go with my beetroot!

I honestly devour it so much, it has occasionally turned my wee pink Xmas Grin

I like a baked sweet potato, tinned tuna with some capers and chopped beetroot through the tuna. It goes bright pink but tastes great.

It’s good with lentils (whole lentils, not red or split) - cook the lentils as you’d usually do, drain, stir in cubed pickled beetroot. V nice with salmon, and fresh dill if you’ve got some.

Make it into a very filling salad with chickpeas, chopped spring onions, diced new potatoes, diced beetroot and fresh dressing.

Serve it alongside lamb chops, hot boiled gammon joint slices, or sausage casserole, or with hot pork pie or sausage rolls.

Very good with any oily fish, try it diced with sour cream and served with smoked salmon, especially with thick slices of hot smoked salmon.

I love it with fish and chips. I make diagonal scores in my fish and pour beetroot juice all over it so it sinks into the fish and the batter. Mmmmmm

In a fish finger sarnie
With feta cheese and chopped spring onions added to pasta
Add to new potato salad with diced celery, chopped spring onions and walnuts 😋
