Not to overcook anything. Nothing worse than bone dry meat and soggy veggies. Roast potatoes on the overhand can take a bit of overcooking.

Nominating someone other than yourself to do the washing up so you can have a peaceful post lunch half-nap, half phone catch up. Precisely what I’m doing now (after my rather lovely Xmas lunch with perfect roast potatoes). Bliss!

I always find the biggest challenges are 1) getting everything ready at the same time and 2) having all the parts at least being OK-ish
