Our go to with cauliflower cheese is grilled bacon and grilled tomatoes. Really yummy.

Sounds beautiful. Just needs slices of tomato across the top and an extra sprinkling of cheese and being popped under the grill for five mins.

Unsure about tomatoes and cauliflower together but would definitely go for OP's suggestion.
