Inspired by my lunch today.
Mine is either classic cheese and beans or Tuna mayo and sweet corn.

Cheese and coleslaw. I had that last night.

Cheese, bacon and cooked onion. But you HAVE to scoop out the potato, mash it with butter and then mix all those toppings in before returning the filling to the potato shells. Because that's the law.

Prawns and seafood sauce!

Coronation chicken and coleslaw.

Or chilli and cheese.

Or prawns in thousand island.

Or tuna and cheese.

God I love jacket potatoes.

I also really love cottage cheese and a big salad with a backed potato. The salad has to have a pickled component - onions or gherkins ideally.

@TheHauntingOfHebeMumsnet you know something.. I actually scoop my potato out from the sides and mix all the Tuna and sweet corn mix in to it. It tastes even better :)

I went to the cafe a while ago with a friend and and had Tuna, coleslaw AND beans in her jacket.......

Tuna Mayo for me

My work used to do this really good Mexican chicken which was like chicken mayo but a wee bit spicy loved that. I actually like creamy mushrooms on top (basically just mix a bit of phili through them) and cheese.

@Lyricallie creamy mushrooms sounds absolutely delicious.

Top with butter and cheese, then coleslaw then more cheese

Ooo I'm having a jacket sweet potato for lunch today! Was going to go with the classic tuna mayo but @BiggerBoat1has reminded me I have some chili in the freezer which would really hit the spot 😋

I also used to like mushy peas and black pepper on them

Either cheese and beans with tabasco, or cheese and coleslaw. Feta with M&S beetroot and apple coleslaw is lush!

For my partner I scrape out all the potato so just skins left. Then I mash all the potato with butter and grated cheese, mix in some chopped ham.
Put it all back in and top with more cheese then bake in the oven until the cheese is melted on the top.

He loves it.
