Chicken Kiev. What vegetables?

I have a nice one of these for tomorrow's dinner but don't know which vegetables to have too. I already have Parmentier potatoes; I'm not keen on green beans or garden peas. What would you go for ? Ta.

Cook your Kiev on top of a slice of bread
It will absorb the errant garlic butter and give you a lovely slice of garlic bread to have as a side.

because you don't have to chase veggies round the plate and mash tastes lovely with garlic butter in it. And everything sticks to the fork.

Broccoli/green beans. Both taste very nice dipped in the leaked garlic butter.

Then probably new potatoes.

Interesting comments about carbohydrates, breadcrumbs, potatoes and so on. These things just never occur to me; probably the same for those of us advocating chips or mash potatoes. Anyways, my parmentier potatoes are already out of the freezer (I usually make my own but these were just 35p in Morrison's) so they'll need cooking.

Flat field or portobello mushrooms might be an idea.

I've just googled carbs because I wasn't aware that kievs were known for being particularly carb heavy. Apparently a (tesco brand) kiev contains 21g. As the recommended daily allowance is 250-350g im not going to worry about overloading Hmm

My CK is a Booth's own brand. A bit expensive at full price (which I didn't pay) but I'd venture they are restaurant quality. I usually have Uncle Ben's golden vegetable rice (or Veeti when I can find it) but I fancied a change. Decades ago, Mum used to cook the Sun Valley CKs and cordon bleus as well. Dad would make a big wok of prawn and vegetable fried rice as a side dish. Sometimes a mushroom sauce too!

I think when chicken Kiev was posh restaurant food in the 1950s it was always served with rice (or wild rice). I'd have lots of green veg.

I love chicken Kiev but all the shop bought ones always leak so you end up with the chicken swimming in butter. Do I need to buy a better brand or is the only solution make your own?

Sorry i meant they leak whilst they're cooking so you just get the garlic left inside. I certainly wouldn't mind swimming in butter on the plate! And mash sounds delicious.

I've had a CK from my local butcher once. It wasn't expensive but it was rather disappointing - not really buttery or garlicky. Another butcher I use does a variation on the CK; chicken and garlic mushrooms wrapped in puff pastry. They are good. I might buy one tomorrow, and a small pork pie.

I tried the bread under the Kiev thing last time I made them. It was delicious. Put a slice of bread under the Kiev (fresh thick cut slices is best) and all the garlic butter seeps into the bread. It makes delicious garlic bread.

I put mine in a China or glass dish, not in a baking tray, so that any butter seepage can be tipped over the Kiev once decanted. I am not letting that butter get away... it's the best bit
