working from home lunches

Need to steal some fresh ideas.. Nothing that requires much cooking though! So far I've done:

Big salads/Buddha bowls
Sarnies
Baked potatoes
Oven chips + oven/grilled type foods
Leftovers

What do you do? I'm so bored!

Wholemeal wrap with hommous and salad.
Homemade carrot soup.
Baked sweet potato and salad.
Left over dinner.
Boiled eggs on rye.
Scrambled eggs with veg.
Garlic mushrooms on toast.

Now DS back at school I've done a big batch in the slow cooker - bean chilli, vegetable tagine or casserole - then fridge and freeze portions and have a portion a day with rice or couscous. Need to get the COVID kilos off and this should help.

I have eaten a tin of tuna with roasted veg every day since March and I am sick to death of it!

What's a buddha bowl?
We've tending to have a rotation of things like:
Veggie frittata
Wraps with salad and tuna or cheese.
Cheese on toast.
And the odd fish finger sandwich on a Friday when I just can't be arsed any more.

But mainly we have a salad. I buy the basics every week, so a ready bag of salad, maybe spinach too, red/spring onion and tomatoes.
And we just add to that. Bizarrely we are not bored of it yet!
Maybe I'll add peppers or avocado and various mix and match additions such as chicken (if I've done a roast and have some leftover), or mackerel, humous, falafels, and/or cous cous.
Sometimes I do a greek salad, with tomatoes, red onion, cucumber, olives & feta.
I might move onto soup in the autumn.

I made naan with salami, spring onions and eggs, baked in the oven then finished with coriander and sweet chilli sauce on top a couple of days ago and it was bloody delicious. I keep thinking of other things to put on one now, it has become an obsession!

@Batfinklestein I think you're describing a Buddha bowl in general, except that it's meant to be vegan/veggie. Just a big salad really with extras - nuts/seeds/quinoa/sweet potato/etc etc on top of a bit salad. Not sure why it's named Buddha, perhaps because it makes one feel virtuous after eating all that Grin

Great ideas - I'd forgotten about soup!

Our lunches have revolved around various versions of the cheese toastie, with a side of fruit.

For the first couple of months it was:
Cheddar
Cheddar and marmite
Cheddar and salami
Cheddar and onion chutney

Eventually we got bored of cheddar and now we're eating brie and chilli jam. Every single work day. It's lush and somehow not getting boring.

I don't do cooking at lunchtime, cooking in the evening is enough. Very boring here, we have:

Meat/fish sandwiches with lots of salad
Meat/fish salads with left over roasted peppers
Crusty bread and pate with salad
Chucky eggs and crusty bread
Mozzarella, tomato and roasted pepper salad

Pancakes, only ever savoury my favourite is blue cheese and sun dried tomato.

Omelettes - mushrooms, onions, tomatoes the choices are endless!

Soup - I usually make a big batch and freeze individual portions.

Toasties

Beans on toast, scrambled/poached egg on toast, sardines on toasts

Salad - using anything that needs using up and so is never the same!

We branched out today and had some ready made veggie samosas with... salad again. That was pretty good.

Jacket potato
Wraps with left overs
Left overs
Fritata
Big salad
Sandwiches
Ryvita, cream cheese, sometimes with smoked salmon!
Mushrooms on toast
Tomatoes on toast
Scrambled egg on toast
Poached eggs in toast (sometimes with spinach or ham or both)
Rice and bean salad
Fried left over rice with kimchi and fried egg on top
Nachos
Crudités and hummus, yoghurt and mint dip
Jaozi (Chinese dumplings)

Anything I have knocking around.

We've been roasting a whole chicken at the start of the week then using it with various bits through the week with salad, wrap, sandwiches etc

We have whatever is in the fridge eg leftovers, wraps, sandwiches ... sometimes I pick up fish if I'm at the supermarket before lunchtime, or I like smoked mackerel salad. No different to work lunches for us as we take sandwiches and I often worked from home in the pms anyway in the past (used to walk dog at lunchtime but he lives with ex now)

I am surviving on chicken and celery salad ( mix up chopped chicken and celery with some mayo and a bit of lemon juice) served on one slice of toast. Maybe 4 times a week after Dh said it was uneconomic to cook one baked potato in the oven ( hate them microwaved.. the devils work)

@wizzler what about cooking your potato in the oven the night before when cooking tea and then reheating for 2 mins in the microwave the next day? I find that not too bad compared to fully microwaved.

I have saved a fortune by not having a canteen/cafe/sandwich shop/vending machine on hand. Overpaid the mortgage this morning!
