working from home lunches

Need to steal some fresh ideas.. Nothing that requires much cooking though! So far I've done:

Big salads/Buddha bowls
Sarnies
Baked potatoes
Oven chips + oven/grilled type foods
Leftovers

What do you do? I'm so bored!

I eat a lot of eggs when I'm working at home - poached, boiled (with soldiers), boiled (in a sandwich), omelette, scrambled.
Or I'll have leftovers from the night before
or a sandwich
Occasionally soup

I've fallen into the habit of eggs and I'm a bit sick of them!
Have started making pizzas from wraps
Top wrap with tom purée, cheese,, veg, meat etc. Bake in hot oven until done, serve with salad. Also love soup for lunch when it's colder. Oh and don't forget toasted sandwiches, they take a bog standard sandwich to another level!!

Homemade soups or risottos - make a big batch in my multi cooker then freeze. With salad or homemade bread from our breadmaker.

Omelettes
Beans on toast with cheese
Fresh pasta with cheese and herbs stirred through
Ham and cheese toasted sandwiches

Slice (or two!) of a seeded loaf, crushed avocado on top along with a poached egg. Sprinkling of chilli oil on top. Lush!

Toasted sesame bagel with leftover roast chicken, couple of slices of salami, some rocket, mayo and the piece du resistance - pickled cucumber. Lovely.

Or, try quesadillas- make a sandwich with flour tortillas, filled with veg, chicken, cheese, sour cream, salsa etc, and then dry fry, flipping over half way through, til the tortillas are crispy.

Things I regularly have for lunch
Small pork pie & pickle
Scotch egg
Slice of quiche
Prawn cocktail with tomato or avocado
Smoked salmon sandwich
Toasted cheese sandwich
Poached salmon fillet with salad
Chicken Caesar salad
Salade Niçoise
Bacon sandwich
Tuna with cous-cous or mixed bean salad
Slice of pizza
Soup hot or chilled
Things on toast ~ mushrooms, sardines, pâté, avocado, ratatouille etc etc.

Half a packet of couscous with tomatoes, cucumber, red onion and a pepper all chopped up, add half a can of tuna, some jalapeños and some salad cream and sweet chilli sauce. I make two portions at the same time so the next day it is all ready to go.

Home made soup and nice bread
Wraps with hummus, falafel and salad
Today I got all the odd bits of veg from the fridge plus a tin of cannelini beans and a tin of tomatoes and made a big pot of minestrone.

Also a little pot of crab with basil tomato and shallots in mayo for a ££££Friday treat lunch on nice bread

Easy "pizza" Cut part baked rolls in half. Put in oven for 5 mins. Then top with tomato puree, cheese & any other topping you fancy. Put back in oven for 5 mins.

Pan fry a diced chicken breast night before. Either use a fresh roll or freshly cook a part baked baguette. Mix the chicken with mayonaise & wholegrain mustard (amounts to your preference). Put fresh lettuce in the roll/baguette & top with the chicken mix. Also nice on a baked potato.

Quesadillas! Two wraps sandwiched together with tomato purée or passata, salad onions, cheese and coriander and dry fry in a pan on both sides until cheese melts. Cut into triangles.

Also planning to make a huge batch of green lentil, bacon, cannellini bean soup with tinned tomatoes stock and a few greens thrown in. It keeps for days and can be eaten as a stew with crusty bread too.
