What’s the most delicious thing you can cook?

I really miss restaurants (to be fair we haven’t been able to go often for the last few years anyway but it used to be my main leisure activity 😂)

Currently cooking an absolutely amazing looking Galician ribeye steak for two and roasted new potatoes as a birthday / anniversary dinner.

But the best part of it is the bearnaise sauce. It’s such a faff to make (clarifying butter FFS) but It tastes so good. I could eat it out of the bowl. The worst part is that it doesn’t keep otherwise I would batch cook it and eat it with chips like they do in Sweden 😬

I think it’s the only thing I can cook that’s as good as a decent restaurant.

I do a good line in things that are virtually impossible to balls up. So potatoes dauphinoise, ragout with beef rib cooked for hours, anything involving slow cooked lamb shoulder... Oh, and I do a good chicken pie.

Just looked up a recipe for bearnaise sauce and it does look a right faff!

Slow cooked lamb shoulder is my favourite! One year for Christmas I did it and bought it from a local very fancy butchers and it was incredible. Never have managed to do it so well since, think it was a fluke!

Could you share your ragu recipe? Mine has never been as good as it could be!

Sticky, slow cooked, beef short ribs. I would pay goooood money for it in a restaurant and can never believe I actually make them that well Grin

Ragu recipe - maybe 1 beef rib per person, lot of good quality red wine, good quality passata, and simmer on a low heat till it's jammy and the meat is falling apart. That's it! I add a stalk of celery and a bay leaf or two (obviously take out before serving) but it would be just as nice without.

I make exceptional homemade millionaire shortbread in a range of interesting flavour combinations. Whisky-infused caramel on orange shortbread is a highlight. So is lemon and rosemary. Mint and dark chocolate.

Chicken roulade with porcini mushrooms wrapped in parma ham.

I cooked it for friends, and about a month later MrFriend was telling us about a lovely meal he'd had in a restaurant, this wonderful chicken with mushroom served with roasted sliced potatoes (hasslebacks). He couldn't remember which restaurant it had been in though.

MrsFriend: elfycat made it for us.

I do a lovely jerk-type chicken dish which is slightly different each time (I don’t measure anything 😂) but always incredible.

You can buy good jarred bearnaise sauce...I just get that.

I make a delicious beef casserole with red wine..really rich and I make my own horseradish dumplings...I love it.

I love millionaires shortbread. Tried to make it myself during lockdown and it was revolting, even my 4yo wouldn't eat it. Everything was wrong with it, think I'll stick to buying Thornton's for a quid. You've got the knack I haven't!!

I buy the jar stuff too sometimes for regular use. But it’s so different from freshly made stuff it might as well be a different sauce. I wouldn’t make it often (not least because it’s the least healthy thing in existence) but it’s so worth it for a special occasion.

I am a very lazy cook, so if I’m bothering to clarify butter to make it then it must be good 😂 Might try making it with ghee and see what happens as it would be a lot less faff then!

I will definitely be trying ragu again and I really want some mint chocolate millionaires shortbread now.

The other thing is macaroni cheese - got a Mac and cheese recipe book as a gift a few years ago and I can’t order it when out any more as it’s always crap compared to the homemade stuff.

A chilli. Takes a couple of hours but I always make loads and it does several meals. Tastes amazing with nachos and all the trimmings.

Sticky toffee pudding. No idea why I'm good at making it when I'm generally crap at baking in all it's forms, but it's just as good as any I've had in a restaurant

I also make a Chinese belly pork...I made up the recipe, I'm sure it's not authentic but it's sticky and delicious...serve with rice and garlicky green beans

A thread talking about food-and no pictures??? One of my specialties is kleftiko :) pieces of goat cooked low and slow in a clay oven, with potatoes,olive oil,salt,lemon juice, bayleaf,onion and oregano...served with salad
