What’s the most delicious thing you can cook?

I really miss restaurants (to be fair we haven’t been able to go often for the last few years anyway but it used to be my main leisure activity 😂)

Currently cooking an absolutely amazing looking Galician ribeye steak for two and roasted new potatoes as a birthday / anniversary dinner.

But the best part of it is the bearnaise sauce. It’s such a faff to make (clarifying butter FFS) but It tastes so good. I could eat it out of the bowl. The worst part is that it doesn’t keep otherwise I would batch cook it and eat it with chips like they do in Sweden 😬

I think it’s the only thing I can cook that’s as good as a decent restaurant.

What’s the most delicious thing you can cook at home?
@SinkGirl I make bearnaise, and am also mad for it. I have never bothered to clarify the butter. I wonder if it makes any difference?
@nearlynermal and @MuppetBabi it really does make so much difference, I wish it didn’t as then I wouldn’t bother 😂 Worth a try when you can be bothered!

You could just get some cheesecloth and strain it through that to take most of it out but I always forget to get some so end up doing it by hand.

Chicken noodle soup, made with lots of garlic, celery and ginger. Everyone in the family love it.

Finally perfected Jollof rice after 2 years- so proud.

I can also cook lots of Asian food well. Thai curries, Indian curries.

My homemade oven chips are the best too.

startrek90 · 10/08/2020 08:41

According to dh who is a fussy bugger I make the best Asian ribs. I also make really good wedges.

My MiL and SiL love my chocolate fudge cake.

My mum always gets me to make her lamb shoulder.

@smaragda

A thread talking about food-and no pictures??? One of my specialties is kleftiko :) pieces of goat cooked low and slow in a clay oven, with potatoes, olive oil, salt, lemon juice, bayleaf, onion and oregano...served with salad
I've made kleftiko with lamb for xmas dinner the last 2 years. Just add all the xmas trimmings. I use the meat juices with cornflour and stock to make the gravy 😋.

I did Ribeye with French Fries and Bearnaise for friends on Saturday.
Made this version of Bearnaise - it was pretty easy. www.seriouseats.com/recipes/2015/04/foolproof-bearnaise-sauce-recipe.html

The most delicious things I cook are not the most complicated but they are not the usual dishes to get in a restaurant (but often first tasted in a restaurant) - they are dishes that I have been regularly cooking for 20 years.

BarbaraofSeville · 10/08/2020 10:20

Prawns in a garlic and paprika oil with crusty bread - takes about 5 minutes and sooo good. I barely bother ordering this in restaurants any more unless there's nothing else I want, because it's so easy, usually one of the more expensive items on the menu and sometimes you only get 4-6 prawns where I can do a bagful for less money at home.

If I'm paying restaurant prices, I want something that takes effort to cook, not something I can make with barely no effort or time at home.

If I want a proper spread instead of just a light meal, I might add asparagus wrapped in serrano ham, meatballs in spicy tomato sauce or calamari, but I can't get that exactly right as my little electric fryer doesn't really get hot enough and it usually ends up being messy.

FraughtwithGin · 10/08/2020 11:40

I have had massive compliments for my vitello tonnato and my wild boar in red wine.

JesusInTheCabbageVan · 10/08/2020 12:54

@QweenMama jollof recipe please!! 🙏

I made kleftiko once. It smelled and looked incredible, about an hour or two before I was meant to serve it. Then I tried to crisp it all up and dried it out Sad

JesusInTheCabbageVan · 10/08/2020 12:56

I thought that hands thing was meant to be begging. It's not, is it, it's clapping. FFS. I'm so sorry @QweenMama, I wasn't trying to summon you!

blurpityblurp · 10/08/2020 13:04

I think that emoji is prayer. Clapping is this 👏

Bloodybridget · 10/08/2020 13:27

A stew with mussels, chorizo, cod (or any other white fish) and gigantes (or just butterbeans). Fabulous with a good baguette and lots of cold white wine.

Iminaglasscaseofemotion · 10/08/2020 13:33

Cajun chicken with all different things.
I'm pretty good at a roast dinner.
DS1 says my Bolognese and meatballs are the best (no one in here likes spaghetti with them though).

DeRigueurMortis · 10/08/2020 13:57

@SinkGirl

You need one of these...

I love mine. You can make mayo, hollandaise, béarnaise etc really quickly and easily. I used to have issues with it splitting but never using this gadget.

You still need to clarify the butter but after that you just add the ingredients into the bottom chamber, butter/oil in the top and crank the handle and it controls the slow release of the butter/oil.

The only downside is that is almost too easy which means making high calorie sauces more often!

The homemade mayo is just gorgeous.

My grandma used to make the best millionaires shortbread in the world - I’m not kidding. Buttery shortbread, oozy caramel and just the right thickness of chocolate. Bought ones are always dry and disappointing.

GetRid · 10/08/2020 15:14

This crispy sesame chicken is amazing - definitely better than a takeaway.

Bought ones are always dry and disappointing

Especially when the supposed caramel layer is grainy and sugary, rather than buttery.

Hugsgalore · 10/08/2020 15:18

@incywincydardar can you share your satay recipe. I've never been able to make one as good as the local Chinese.

incywincydardar · 10/08/2020 15:34

@Hugsgalore I use a recipe from the gusto boxes. I'll send you a photo when I'm home.

The slimming world version includes a can of Diet Coke, which sounds awful, but is actually really good!

Tlollj · 10/08/2020 15:41

You lot are making me hungry. 😀
I can cook a good roast dinner. Roast potatoes and yorkies are pretty good.

incywincydardar · 10/08/2020 16:00

Gusto recipe. It's actually satay noodle salad but so good!

@incywincydardar thanks. I've tried the slimming World version. Its nice but still lacks something. I'll definitely give that other one a go. Love satay noodle salad 🤤
