How to make courgettes nice?

ThisIsNotARealAvo · 06/08/2020 08:08

I have never really liked courgettes as I find them too watery and there's something about the taste I'm not crazy about. However, we have been given some from my parents garden plus they are so healthy and cheap I'd really like some ways of making them nice if anyone has any good recipes?

I can usually get hold of any ingredients and eat pretty much everything else.

I grate them and use them to bulk up things like spag bol etc.

Thighdentitycrisis · 06/08/2020 08:13

I’m going to try this

Roast them with herbs and garlic.

Also grate them raw into salad is good or eat in sticks like carrots with hummus

Fry some onions and then add in your courgettes, some garlic and some tomatoes. Cook gently until they are soft and golden (taste to check they’re cooked, should be about 10 mins or so). Very tasty

Frownette · 06/08/2020 08:15

Sometimes I cut them into fine strips and use them as spaghetti, lightly steamed with butter and black pepper, tomatoey sauce on top

JassyRadlett · 06/08/2020 08:16

Pan fry with red onion and cumin, toss with lemon juice and couscous. Particularly nice served with fish.

Ginfordinner · 06/08/2020 08:17

Griddled on a very hot griddle pan, and seasoned with just salt and pepper.

Disfordarkchocolate · 06/08/2020 08:18

As courgetti, in a fairly strong sauce. I had them in a Mindful Chef meal and it was just like pasta. I was astounded.

Toomboom · 06/08/2020 08:18

Roast them. Much nicer than cooking them in water when they just end up tasteless

IAmFleshIAmBone · 06/08/2020 08:18

Thinly sliced, raw in a salad with a nice dressing. I also use it sliced into thin sheets alternated with sheets of aubergine in place of the pasta in a lasagne.

WellIWasInTheNeighbourhoo · 06/08/2020 08:19

Salt them overnight to suck out the water then rinse & bake with garlic, olive oil, herbs etc

Illuyanka · 06/08/2020 08:20

I love them, it's so versatile. Great just roasted, and I add them to things like bolognese sauce, stew, stroganoff.

BiarritzCrackers · 06/08/2020 08:20

I love this as a way of using a lot up.

Another thing I do, is boil 2cm disks for a few mins, drain, then chuck back in the saucepan with a sloosh of olive oil, some finely chopped garlic, and cook for a couple of minutes or so (low/medium heat - don't let the garlic burn). Squeeze of lemon, and some chopped parsley if I have some. I eat that with brown rice, and plainly cooked meat - steak, roast chicken legs, lamb chops.

Wannabefarmer · 06/08/2020 08:21

Cut them into small chips, dip them in batter and fry in hot oil. Remove from oil and add salt, pepper, oregano and grated parmesan cheese. Serve with tzatziki dipping sauce 😋

Xiaoxiong · 06/08/2020 08:21

Like @Ginfordinner, griddle the slices of courgette but then dress with a squeeze of lemon juice, tear a load of fresh mint over the hot courgette slices, and then put on a big plate or a platter and break a ball of burrata over the top. Season with sea salt and a trickle of very green extra virgin olive oil.

Cut them thinly. Salt them and put them in kitchen roll. Once dry dip in egg and flour and shallow fry. Or just make some chips.

PrayingandHoping · 06/08/2020 08:24

Slice them and put on a bbq (on a griddle pan)

PuppyMonkey · 06/08/2020 08:24

My friend covers them in batter and deep fries them and OMG it is the nicest thing you’ve ever tasted.

Daisydoesnt · 06/08/2020 08:25

Grate them! Never cook a courgette with water, much too watery.

Coarsely grate (you don't need to peel just give them a wash) and then add to a frying or saute pan with a glug of olive oil. I also like a good pinch of chilli flakes and /or a grated clove or garlic. Pinch of salt & pepper. Saute over a medium heat for about 10 minutes, stirring every now and then so they don't catch.

It's one of my favourite veg sides at this time of year. You'll probably use one medium sized courgette per person.

Chrestomanci3 · 06/08/2020 08:25

Courgette cake! Sounds strange (but so does carrot cake when you think about cake made with root vegetables), but tastes really nice.
