Love these threads for inspiration, especially when it's too hot to cook.

We're having roast peppers, red onions, courgettes, sweet potato and halloumi with cured meats and pita bread. Delicious and takes 5 mins to prep.

A mini gammon steak with a monster omelette - cheese, red onions, mushrooms and peppers Grin

PrincessSarene · 24/06/2020 18:52

@Sparklyring Sorry, was busy cooking then getting pinned by grumpy feedy baby!

The recipe is actually from Persiana by Sabrina Ghayour. There’s loads of lovely things in there, including plenty of quick grills and salads that are really good for warm weather.

Fish fingers, potato waffles and baked beans😂 it was bloody delicious.

Tuna & mixed bean salad with red peppers and black olives, with lashings of mayonnaise.

IHaveBrilloHair · 24/06/2020 20:04

Falafel burgers.
I bought them from Asda, and the buns, and have piled them up with chipotle paste, sliced tomatoes, cucumber, spinach salad, beetroot, guacamole and melted cheddar.

We got our first Hello Fresh box today. It'll either be Thai green chicken curry or parma ham wrapped chicken breast with rocket pesto tagliatelle or creamy mustard and bacon penne with pear and blue cheese salad. Leaning towards the 3rd one...

AdaColeman · 25/06/2020 15:44

@Doordine, they ALL sound totally delicious!

SallyWD · 25/06/2020 16:00

Mackerel salad.

Pipandmum · 25/06/2020 16:05

Big fan if those fresh dinners from Tesco you pop in the oven and add veg and potato. So tonight pesto chicken breasts from the Finest range, a medley of veggies and potato slices (also prepared by Tesco). Accompanied by a glass or three of low alcohol summer berries/wine drink on ice. Not the most budget friendly way to eat but truly cannot imagine cooking in this heat and it's my daughter's main meal of the day so needs to be more substantial than a salad.

Kids are making pizzas from a kit I found in the back of the cupboard. Dunno about DH and me yet. Something prawny, jambalaya maybe?

Babyshine2020 · 25/06/2020 16:13

We're having fajitas, eat as much as you want and they reheat ok for tomorrow's dinner

mbosnz · 25/06/2020 16:58

Greek marinaded lamb skewers with pilaf rice and green salad. Possibly with affagatto to follow.

BillywigSting · 25/06/2020 17:02

Was going to be chicken tacos but dp cba with the mess.

Dc has had pasta with tomato, peppers and cheese.

Green Salad with tomatoes etc potato salad, coleslaw and pasta salad, meat. Lovely crusty bread. Just cannot bear making hot food.in this weather or eating it.

UnfinishedSymphon · 25/06/2020 17:22

King prawn stir fry with Blue Dragon chow mien sauce, I usually make my own sauce but I CBA in this weather, plus I'm going to make DP cook it Grin

OneIsAWorldOfBooks · 25/06/2020 17:31

Curried halloumi tonight, I usually do it with salad and wedges or potato salad but the fridge is a bit empty so having it with saag aloo and green veg.

Was meant to be courgette and mozzarella quiche but we've run out of eggs.

happypotamus · 25/06/2020 17:40

Some random salad bits from the Marks and Spencers petrol station shop and garlic bread.

Hope: a delicious takeaway from an Indian place I discovered while out walking. Figured it would be a nice thing to do on our anniversary.

Reality dh is pissed off because the garage door is broken. I'm pissed off with dh's pissed offness. We're all far too hot so, of course, I've put the oven on to make us all even hotter and we're having whatever I scrape out of the freezer.
