Love these threads for inspiration, especially when it's too hot to cook.

We're having roast peppers, red onions, courgettes, sweet potato and halloumi with cured meats and pita bread. Delicious and takes 5 mins to prep.

Chicken, bacon and leek risotto. It was yummy but soooo hot standing by the hob for an hour stirring the rice. I like the sound of salady bits for dinner but ice cream definitely gets my vote in this weather. Trouble is the DCs have eaten it!

5 spice pork fillet with brown rice, roasted broccoli and hoisin sauce. Super quick and well tasty, even the 6 year old is eating it!

Five Guys Burgers and Fries for us tonight.

It's our wedding anniversary and we got hitched in Vegas so do an American themed restaurant every year. This year the restaurants coming to us cos of Covid

Putting the new Tofoo sage and onion sausages on the bbq and will put them in a ciabatta roll, and I'll have some salad and olives on the side. It's been so hot today that I don't fancy much.

Hopefully they bbq well being veggie!

Pork peri peri steaks cooked on the barbie with tomato and feta salad, potato salad, home grown mixed lettuce (all home made!) and I’ve made a cherry clafoutis for dessert.

It’s a bit extra for a Wednesday night, but it’s been a tough day so why not?!

Myself and Dh are having sweet balsamic onion quiche with chorizo potatoes and salad
Dd is having chicken goujons with jacket potato and salad
Followed by fresh fruit with chopped up meringues and creme fraiche

@Ernieshere Yes, normal or risotto rice both work. Empty rice into an oven dish with a tin of chopped tomatoes and 600ml chicken or vegetable stock from a cube. Add a knob of butter. Stir and stick it in the oven at 190°c for 30 mins. Let it sit for 5 minutes when it comes out of the oven. Job done.
