I can't think of what to cook anymore!!

Yesterday was chilli with guacamole and a homemade red cabbage coleslaw (my DH had nachos with chilli and cheese but I’m lowcarbing).

Today is smoked mackerel and canellini bean salad, with mixed leaves, celery, cucumber and shallot, and a French dressing. My DH will have boiled and dressed new potatoes with his.

Tomorrow we’ll probably have pasta as I have some sun-dried vegetables and a bit of pesto to use up. My DH will have that and I’ll have some of the sauce with a roasted aubergine.

After that I might do Chinese crispy chicken wings and a Chinese cabbage and mange tout stir fry.

Something with smoked haddock that I haven’t quite worked out yet. Possibly a gratin with cherry toms and spinach.

Barbecue in this wonderful weather.

Homemade burgers stuffed with tallegio cheese in a bun with onions, salad and a few chips

Tonight is steak sandwiches (cooked on the barbecue), hm coleslaw, iceberg wedge salad with blue cheese dressing (homemade) and crispy bacon, and homemade fries. Oh and I'm making nacho cheese sauce for with the fries.

Tomorrow linguine with clams, prawns, cherry tomatoes rocket.

Thursday is jerk chicken, rice and peas, homemade coleslaw, sweetcorn fritters and salad.

Friday, crab salad, then hake with salsa verde, crushed new potatoes, green beans and green salad.

Saturday, don't know DH is cooking but we have some duck breasts in the freezer so he'll probably use those.

Sunday, something with monkfish, haven't decided yet, maybe paella, may barbecue it if the weather's good.

Chicken and bacon salad this evening with a vegetarian Caesar dressing (made with Manchego instead of Parmesan) so that vegetarian DD can have it too with quorn chicken fillet
Tomorrow I'm making pulled pork in the slow cooker
Salmon on Thursday
Lots of jersey royals to go with these

Chicken stir fry - I make a cheats satay stirfry sauce with peanut butter, sweet chilli sauce (or honey) and soy sauce.

We love it and both the kids scoff it without paying too much attention to what veg they are eating so winner all round.

It's DH's birthday, so as is traditional, it's chicken in a creamy onion sauce on a bed of fettucine, followed by (drum roll please), the most amazing gluten free victoria sponge sandwich baked entirely from scratch and on her own DD14, with fresh whipped cream, jam and strawberries.

And wine.

(It was going to be a deeply exotic and expensive bbq, but we ran out of ideas and couldn't be arsed).

Chicken korma and flatbreads ... but i would really recommend Sainsbury's Magazine website for recipes ... I've been feeling the same and have made loads of their meals over the last couple of weeks! Lots of good inspiration 😊

Antipasti platter (Parma ham, Milano salami and anything else lurking in the fridge)with asparagus,focaccia bread and dips and some mini picnic items from M&S that youngest DD is most looking forward to (cocktail sausages)🤦🏽‍♀️

For the past 2 weeks, I feel this way too and it's actually making me feel quite low and out of sorts. Normally, I love to cook, always have, and we rarely ever eat out or get takeaways because I enjoy it so much. Lately, having to cook is making me want to chop my own head off. I've been having everyone in the house sort themselves out. If they're hungry, they know where the bloody kitchen is.

I feel like that occasionally Aqua and I love to cook too, I just let it slide for a while and then have a flick through my cookbooks or get excited about seasonal ingredients and I soon get my mojo back. Don't worry!
