What to do with heavy carrot cake?

I made a carrot cake yesterday from an American recipe online. It tastes ok but it didn’t rise properly so has the density and weight of a discus. What can I do with it? Chop it up and make a sort of rocky road? Could probably literally use it as a paving slab.

Have it with custard as a pudding?

MattBerrysHair · 09/05/2020 17:19

Treat it as a fruit cake/Xmas cake and eat it with cheese, or like a malt loaf and slice it thinly and spread it with butter. I love stodgy heavy cake.

Chop into small portions and freeze, serve with tea/coffee.

I agree. Warm with custard. Or put into a trifle.

Mmm, custard, cheese and butter. You are my kind of people.

Yes, you've actually made sticky carrot pudding. Well done. Serve with custard or caramel sauce.

TheHumansAreDefinitelyDead · 09/05/2020 17:20

Good creamy frosting, lots of it

Standstilling · 09/05/2020 17:20

Small portions? Obvs not you Dozer Grin

I did actually put lemon buttercream on because I didn’t have any cream cheese. It is very lemony and tastes like it belongs on a different cake.
I will scrape it off.
Sticky carrot pudding 😍 Yes! Serving it hot solves all my problems.
Thank you everyone?

Right will go for dog walk after dinner but before pudding because I think I won’t be able to move after buttered sticky caramel carrot cake and custard. Plan.

"Small portions" indeed! What a daft idea.

I'd usually go for custard myself, but might go badly with the scrapings of the lemon! So, how about lashings of ice cream while we still have warm weather? Treat it like a brownie.

Spam88 · 09/05/2020 17:30

Dense cakes are my forte, I tend to just ignore the fact they're a disaster and plough in anyway. But custard makes everything better of course.

P1nkHeartLovesCake · 09/05/2020 17:31

A ton of cream with each slice? Cream solves everything......

Dozer · 09/05/2020 17:35

Suggested small portions because unfortunately I have a longstanding binge eating problem and if for example the DC bake I find this approach, freezing stuff in portion sizes, helps me. Blush

TimeForACheeseSandwich · 09/05/2020 17:40

Apologies @Dozer, didn't mean to trip up like that. Hope you're getting on okay with it, structuring your food is definitely harder in lockdown...

enjoyingscience · 09/05/2020 17:43

Mix with cream cheese frosting and make cake pops?

If you can’t be arsed, and I don’t blame you, as life is usually far too short to make cake pops, I’d go with custard as above.

If you wanted to go really wild, could you fry it in butter first? (I’m imagining it has the texture of Christmas pudding here).

Standstilling · 09/05/2020 17:45

Sorry, Dozer, I was too flippant. I absolutely should be freezing it in small portions. I’m just not feeling very sensible at the moment Smile

Lemon and custard - you’ve got me thinking; is it wrong? I’ve had lemon sponge pudding with custard...

OP posts:
Dowser · 09/05/2020 17:49

Custard.
Definitely

Yallreadyforthis · 09/05/2020 17:51

This can't be a genuine question...? What to do with cake?

Surely the density of the cake just means you adjust your cake: ice cream or custard ratio?

Honestly OP!

'What to do with cake' ...!
Pft!!

SignOnTheWindow · 09/05/2020 18:01

Send it to me?

NotaFreeloader · 09/05/2020 18:04

We do loads of baking and when this happens we do as others have suggested and have it warm with custard or crumble it up to have with ice cream

Dozer · 09/05/2020 18:20

Don’t think anyone is feeling like being sensible at the moment!

Brew
Dozer · 09/05/2020 18:21

Carrot cake trifle? One big, or mini ones.

Small layer carrot cake bits, creme with sherry, brandy or whiskey, toasted nuts on top?

Ellmau · 09/05/2020 18:23

Some sort of trifle I think. Or hot with ice cream/cream/custard/choc sauce/caramel/other sauce to taste.

But pudding rather than a cake.
