Veg box celeriac, beetroot ideas please

Love a good veg box and have been on a few of these threads, also looked back at previous threads for ideas but nothing suitable so please, help me make something delicious from my 2 celeriac and 6 betroot before they wither away to nothing in my fridge. Open to combining the two and I also have some lovely big ripe tomatoes if they could go with them as well. Freezable portions would be a bonusSmile

I learnt to love beetroot with two Jane Grigson recipes from her classic Vegetable Book. Both start with cooked beetroot - I bake and then peel.

In one you fry onion in butter, add chopped beetroot and as much chopped apple and then stew it down to a pulpy sort of consistency, season with nutmeg. In the other, layer the beetroot with cheese and cream, top with breadcrumbs and bake.

Roast the beetroots in salt, pepper & little olive oil then blend to make a pasta sauce. Super tasty! Serve with feta or similar.

Great ideas. I like beetroot chopped up in salad, goes well with feta cheese too in a tart.

Ooh I never would have thought of using beetroot for a pasta sauce but that would defo go down well in my house. I must get some feta, I had a few packs at the start if lockdown but all gone now 😞

Grated raw celeriac with a dressing
Celeriac soup
Beetroot with salad and feta and walnuts
Sliced beetroot and salad
Goats cheese and beetroot
Beetroot soup

You can make celery salt with the celeriac. Grate, mix with the same weight of salt, bake in a slow oven until dried out, grind it together in a mortar and pestle.

What kind of apple works best? I always have a lot of pink ladies in though in autumn my tree gives some tangier braeburns (for future boxes lol)

I've recently been fascinated with the idea of beetroot bourgignone (but haven't made it!)

We made this a few days ago- with shop bought meatballs rather than homemade. It was delicious.

Make cake with beetroot. I have tried it and it was a fabulous texture although I put too much ginger in.

Celeriac I just do the same as potato. The best is the remoulade /coleslaw though.
