Veg box celeriac, beetroot ideas please

Love a good veg box and have been on a few of these threads, also looked back at previous threads for ideas but nothing suitable so please, help me make something delicious from my 2 celeriac and 6 betroot before they wither away to nothing in my fridge. Open to combining the two and I also have some lovely big ripe tomatoes if they could go with them as well. Freezable portions would be a bonusSmile

I use celeriac to make a topping for fish pie
if you poach a mix of whatever fish you have eg smoked/unsmoked white fish, prawns and salmon in a tin of coconut milk with some thyme and lemon rind/lemon juice, add some sautéed spring onions and then top with mashed celeriac (can cook in veg stock or water) before browning in the oven
its a surprisingly good combination

Marking place by adding that I often cook potatoes for mash with celeriac or parsnips and add cumin or herbs when mashing.

Must try dauphinoise...

I add celeriac to mash for cottage pie. Or grate it raw for coleslaw, could use carrot, beetroot and apple with a touch of mustard through the mayo

earlier in the year i kept getting multiple beetroot in the veg box. I am not very keen but some of the ideas above look lovely! I did try roasting but not for us.

One week we were sent the largest parsnip I have ever seen. So i decided to try vegetable crisps. Just cook for a long time at c. 150 degrees. Bit of oil, some seasoning and herbs. Parsnip - beyond lovely. Beetroot - wouldnt dry out (very wet) so either burnt or floppy! My oven has gone wrong so I am using a small top oven and I think the temp is off. So I will try again with the crisps. Perhaps using a slicer rather than handcutting.

I suffer from acid reflux and beetroot is meant to be a wonder food as it is alkaline. So all these recipes posted above will be really helpful for me to try. Thank you!

I was a bit heavy handed with the cheese 😀😀😀, had to be quick with the beetroot as the 5 year old was eyeing it up appreciatively as it came out of the pan. Used the onion, thyme, garlic, lemon peel and seasoning from the cream infusion to make celeriac soup, quite an unusual taste, the lemon really came through but very very tasty, think it was a variation on the bbc good good food recipe. Still have some beetroot left so going to do the burgers, meatballs and pasta sauce.

This is lovely. You can make it with the larger beetroot, despite the recipe calling for the small ones only. You just need to chop them up (obvs)
