Malteaser cake recipe - help a Catholic out

Help on an Ecumenical matter please Grin So I've been dipping into the world of traybakes - I can make a pretty respectable caramel square (nice, thick, chewy caramel!) and Mars bar crispy square, but I need a good recipe for Malteaser cake.

I tried the BBC Good Food recipe the other day and it didn't have that lovely feeling of your pupils dilating with the sweetness of it all like a good traybake normally has. Am I doomed to never get it right because of my lack of Prod blood? Help! How can getting the right ratio of digestive biscuits, butter, syrup and chocolate be so hard?!

I'm normally a good baker! Honest!

Our teacher used to drive me nuts as she pronounced it margarine as in Margaret.

So did my teacher! I have never heard anyone before or since pronounce it that way.

Tommorrowsanewday · 17/05/2020 00:39

Maybe we had the same teacher 😳
She also pronounced April Aprile as in mobile.

She also pronounced April Aprile as in mobile.

I'm now wondering if we went to the same school...

Bbc food have a lovely maltezers no bake cheese cake it's lovely. X

SoupDragon · 17/05/2020 07:34

lots of people swear by Soupdragon's from here but I have to admit I'm not a fan. Too sweet even for flapjacks for me. I like Lorraine Pascal's ones from the BBC site.

That's odd as that recipe seems to have more sugar/syrup in it. I wonder what makes the difference? I don't have a tin of condensed milk to hand to see how much sugar is in there but it can't be as much as the sugar in Lorraine's recipe.

(I'm just curious - I'm not going to hunt you down for flapjack war 😂)

EarlofEggMcMuffin · 17/05/2020 07:37

Isn't there a famous flapjack recipe here, using condensed milk. Let me see if I can find it- I know I did it once, and it were yumtastic.
Found it [https://www.mumsnet.com/Talk/food_and_recipes/1560388-Flapjack-recipe-please here]] containing butter, condensed milk, porridge. @JasperRising Made for this thread.
Sorry I see that someone else referenced it...known as the @SoupDragon flapjack recipe.

EarlofEggMcMuffin · 17/05/2020 07:37

Oh Lord, what a cross post!

TheRattleBag · 17/05/2020 07:46

Just checked on the Nestlé website and condensed milk is 55% sugar, although some of that will naturally occurring in the milk.

Ingredients: Whole Milk, Sugar. Sweetened Condensed Milk Minimum 8%, Milk Fat, 20% Milk Solids Not Fat.

I tried the famous recipe the other day and it was a massive hit with all who tasted it Grin

SoupDragon · 17/05/2020 07:54

It has something like 75g of syrup and half a can of the condensed milk. No other sugar.

That link is about of date version - I ditched the 100g of sugar in later versions.

SoupDragon · 17/05/2020 07:55

An "out of date" version. Not "about".

Lunawuna · 17/05/2020 08:43

Interesting reading that flapjack thread that you measured 2tbsp of syrup to be 75g Soupdragon. I assumed it would be 3tbsp.

Which may answer the question I was going to ask re:avoiding the butter, chocolate, syrup mixture splitting while it’s melting. Sometimes it’s fine, sometimes it splits slightly and I wasn’t sure if it was because the bowl was getting too hot over the water or because there was too much syrup or something.

Thanks for the flapjack tips!

BeatrixPottersAlterEgo · 17/05/2020 09:09

Turn it down a notch and never stop stirring.

I went through a phase of microwaving my butter and chocolate mixes. I'm sure it works well for some, but don't do it if you're easily distracted and can only ever set the microwave to five minutes on high.

I made fifteens yesterday and left squodgy little packages of them on the doorhandles of family members on our government issue walk 😁

FlaviaAlbiaWantsLangClegBack · 17/05/2020 09:42

Oh no, I'm sorry Soupdragon Blush

The one I used had condensed milk and sugar so it must have been the one linked.

MissisBee · 17/05/2020 09:49

I had no idea I'd ever heard of echo margarine until I was the picture of it there. Then it came floating up from the depths of my memory. My mum says it with a hard g too. We always used stork for baking.

I would LOVE an Aldi here. I always seek one out on holidays. Once we went to Austria, and every single supermarket there was in the Lidl/Aldi style

SoupDragon · 17/05/2020 09:56

Interesting reading that flapjack thread that you measured 2tbsp of syrup to be 75g Soupdragon. I assumed it would be 3tbsp.

I think it said "generous tablespoons" so, nice and accurate 😂😂

Oh, no need to apologise, @FlaviaAlbiaWantsLangClegBack - you should have seen the original recipe I based mine on. It had enough sugar that it stripped all the enamel on your teeth with a single glance!

Eve · 17/05/2020 10:30

@BeatrixPottersAlterEgo Electric knife owning family here - it came out every Christmas to carve the turkey. 😁

LadyEloise · 17/05/2020 10:30

Is there no Aldi in NI ?

isabellerossignol · 17/05/2020 10:32

No, there's no Aldi here.

I never cross the border without sneaking in a trip to Aldi for their bargain skincare products.

isabellerossignol · 17/05/2020 10:33

I got an electric knife for a wedding present.

Whilst the kindness was appreciated, I think it ended up in a charity shop, still in the box.

EarlofEggMcMuffin · 17/05/2020 11:07

For everyone sneaking into Aldi when they come south, there's me heading into Sainsbury's in Newry when I go North.
They usually have exotic flavours of Tayto that I cant get here. Mmmmm.
And the staff always comment on my accent and wish me a safe trip home.

Tommorrowsanewday · 17/05/2020 11:32

Isabelle her name was Miss L and after she married Mrs R.
Our school closed sometime in the 80s/early 90s, so maybe she moved on to yours.

Good news, I found a tin of condensed milk in my cupboard which I assumed was caramel so let the Lemon squares commence!

No Aldi here LadyEloise.

We have in no particular order
Tesco
Sainsbury’s
M&S
Asda
Iceland
Lidl
Food sections in Dunnes
Home Bargains is becoming popular. I buy a fair bit in there, as well as B&M, Poundland as well as Spars
I know of at least 1 Supervalu and may have missed a few smaller shops.

isabellerossignol · 17/05/2020 11:44

Isabelle her name was Miss L and after she married Mrs R.

Ah, no. Different name. I was at secondary school late 80s to mid 90s.

That strange margarine pronunciation must be unique to HE teachers Grin

LadyEloise · 17/05/2020 12:06

I'd love a Waitrose and a John Lewis too.
No chance now. Retail is collapsing all round us.

eggandonion · 17/05/2020 12:17

I got an electric frying pan for a wedding present, do they still exist? My in-laws fry everything.
They make a fry, then put baked beans in to make them more tasty.
For this reason, on trips north, we nip into forest side, and buy food and eat in Sainsbury cafe. But we call it supermac. A trip to supremacy was a great day out.
