@graphista if you have yoghurt you can tone down your curry with that instead of coconut milk.

You can follow the spice instructions for any mild curry recipe.

Morning All! Help please! DH picked up a click and collect yesterday so we are now back to fully stocked on all fresh wonderful crunchy things.

I had to play freezer Jenga in order to accommodate the fresh meat so we’ve got a homemade chicken pie for supper tonight but I’ve also had to defrost two whole lemon sole that have been in the freezer a while.

I’ve never cooked with whole fish before and I haven’t the faintest what to do with them. Please would anyone have any suggestions or recipes? I have plenty of veg and a well stocked pantry.

I used to follow this basic idea furble. Stuff it full of herbs and stick it in the oven wrapped in newspaper. This is Jamie oliver’s salmon in newspaper recipe.

Oh hang on, missed it was lemon sole! Doh.

I used to chop up a tray full of suitable veg (peppers, tomatoes, courgettes etc). Put the fish on top drizzled with oil and lemon then just bake in the oven.

Yes I’d bake it whole, or if you have a big enough pan I guess you could lightly flour it and fry. Or you could fillet it and fry.

Well we had a very decadent supper of lobster and champagne last night...it was truly amazing and something I will remember for a very long time. Only possible because restaurants are closed and the lobster that was sold for £45 in a fancy restaurant is now being sold online direct to consumer. It's interesting how lockdown is forcing change to business models, and in this case a positive one!!

In frugal news, we also had some excellent pollock last night baked with a breadcrumb crust made from a rock-hard loaf I froze months ago. The other half of the loaf I have broken into pieces about the size of a marble and I'm going to make a tomato panzanella salad for lunch to go alongside a pan of mussels.

And my sourdough starter is bubbling! It smells like very mild yoghurt. I'm going to make a levain tonight, shape tomorrow and bake on Friday and see what happens!

I’ve just checked and Sultana of Swing is covered in wispy mould. I’m guessing that wasn’t supposed to happen. Does he now need to be put to death?

According to my friend that teaches sourdough classes, the only mould that is bad is pink! She also advocates a loosely lidded jamjar which reduces contamination.

My starter was a bit runny, but I'm putting that down to slightly too much liquid - discarding most of it into my starter trashpot and pressing on with re-feeding. It will strengthen over time...

I scooped off the mould and binned that. It was white fuzz, definitely no pink! It has a beery smell about it but no bubbles yet. Hmm... never was much good at this patience thing!

That’s a fine looking focaccia.

I’ve made sweetcorn and jalapeño soup for lunch. Slightly too hot but that’s how I like it. Root veg tagine for dinner using the last of this week’s veg box before the new one arrives tomorrow.

Chilli tonight with a pack of vegan chorizo mince I had delivered last week. Should make 3-4 decent portions so will freeze 2 for later as the family won't touch the "fake meat" lol

Defrosting some lamb and butternut squash curry today to be had (at DH's request) with chips.
He later described this as "a light meal", based on the fact that the curry is half of a previous meal.
I pointed out that that's why I'd made a recipe that was for four people initially. Godsake!

LaM that's why I always over-order when we get a takeaway curry. Order once, eat twice, that's my motto...

Can't wait to make focaccia though I could never make anything so beautiful! How can you bear to cut into it??

make moussaka with layers of sliced aubergine and courgette Ooh I like that idea, courgettes instead of potatoes? The only potatoes I have are tinned or instant mash as I can't peel/slice raw potatoes and actually I'm not a huge fan of eating them. Like them on occasions

Had to bin quorn bacon and deli slices that were unopened as somehow water got into them! I'm not talking a few drops I mean I could have poured it into a measuring jug!! How?
