Xiaoxiong, by some sorcery I have all the ingredients for those cookies. Even down to a slightly sad looking cup of spelt flour (and strong wholemeal which I cannot make decent bread with and which reproaches me each time I look at it). That is tomorrow sorted - I shall turn the oven on, and get going.

Ninkanink · 17/04/2020 16:52

Oh @Graphista that’s a shame about the scales! I must’ve missed that you’ve been trying to order.

And i totally understand what you mean about rebelling against being dictated to! - I’ve felt that way too, on several occasions over the past few weeks, because I’m very much used to being guided by what I fancy. Under normal conditions I’d be able to juggle a bit more easily, change my mind, and/or go out to get something else if nothing in the fridge actually appeals, and I’d still be able to balance it so everything gets used. But I’ve wanted fish/seafood/huge salads SO BADLY a couple of days that I’ve had to make a conscious effort to be happy and grateful for the very good and plentiful food we do have. Which sounds awful. I’ve just tried to do as you’re doing - have whatever I can find that does hit the spot, and then get back to the frugal use of foodstuffs the next day.

I struggle with appetite as it is, only been eating 1 meal a day last couple years and only last 6 months managed to up that to 1 meal and 1 snack a day. And even that has felt forced at times.

I don't get hungry very often at all!

The real bugger is I've not even lost weight!! How?!

I'm having bloody cheese and crackers!

Well I say cheese and crackers, it'll be cheese, crackers, pepperoni, pickle.

Graphista if, that's what you fancy, go for it!
With the yoghurt, put a clean j cloth, teatowel or kitchen towel in a sieve or colander, place over bowl, pour in yoghurt and let it drip. Fold towel over and place a plate with a weight (can of beans or something) on top to squeeze a bit more moisture out. Fruity cream cheese - spread on a biscuit for instant cheesecake, with maybe some of your frozen raspberries on top, if you still have some!

Londonmummy66 · 17/04/2020 18:56

@Graphista - I think we all get like that sometimes. I am taking the line that I need to support local restaurants that are turning to delivery to keep afloat once a week so tonight is pizza night from a nice little Italian up the road.

On the food front if you have potatoes then how about jackets with cottage cheese oven roasted tomato (put them in the with spuds) and pepperoni?

Kitchen scales are readily available on ebay at around the £12 mark (inc delivery) whether you want digital or mechanical. Just filter to UK only and new -might be a week or so arriving though.

Spam88 · 17/04/2020 18:58

Could you freeze the yoghurt? I've frozen plain yoghurt into ice lollies before, or if you don't have moulds you can make yoghurt bark by spreading it on greaseproof paper or something similar (can mix in berries or honey if you like as well) and then you eat it frozen broken up. Maybe someone can advise whether that would work with fruit yoghurt?

Graphista · 17/04/2020 19:57

I went "fuck it" mode!

Had cheese, crackers, pickle, tomatoes and pepperoni. Poured a glass of wine...and promptly sent it flying across the kitchen! Had to spend around 20 mins cleaning that up and slippers are wrecked! Sad

Hit the rum instead and am now wayyyyy past tipsy!

Fuck it it's Friday!

Sounds like a fun Friday night @Graphista 😂😂

The salmon didn't really shrink! And is tasting lovely!

Graphista · 17/04/2020 20:16

I'll probably get a decent nights sleep now but it's not an ideal solution. I'm a total lightweight these days due to not being allowed to drink on previous meds, total cheap date! Grin

Reporting back from the coal face of preserved lemon recipes. I made a pesto with pumpkin seeds, garlic, kale, preserved lemon and Parmesan, all of which we had. Was delicious with some of the Brexit pasta (we don’t eat masses of pasta usually). I feel very pleased with that and that is two lemons down. I will get through them one way or another.

PurpleDaisies · 17/04/2020 20:46

Friday fake away here. I had a chick pea curry and aloo tikki with coconut chutney. Plus ready made naan. Get me! It was absolutely delicious and I’ve got loads of leftovers. The aloo tikki had cooked and raw quinoa in them, and I added some leftover root veg mash. I’ve frozen a stack of the potato patties to fry next time.

Went for our fortnight shop yesterday - salad yesterday dinner, hummus and grated carrot and lettuce sandwiches for lunch and tonight I’m gonna grill every vegetable and douse them in tahini and lemon dressing, can’t wait!

Furble · 18/04/2020 07:44

Morning All and hooray for the weekend! It’s been a long week and I can’t wait to get cooking this weekend.
I’ve got some homemade apple sauce to finish off and some tired bananas so I think muffins will be the first order of the day!

PurpleDaisies · 18/04/2020 09:28

Wow, weed need details for those. Do you mean three days for your starter to get going? I’ve always wanted to do sourdough. Thinking this is the time!

Weedsnseeds1 · 18/04/2020 09:31

No, three days start to finish on croissants, starter took about a week, grew yeast from dried figs, then added to flour and fermented. It's mainly slow proving in fridge though, actual cooking action is about an hour

Yesterday I made a puréed soup from a butternut squash and a small swede, both out of a weekly veg box delivery, which frankly is too much for 2 of us but so far we haven’t wasted anything.
Made it a sort of Thai style, onion, garlic, plenty of ginger and red chilli, and the remains of a pack of coconut cream that was in the fridge.
Delish! And filling enough on its own for lunch.

ptumbi · 18/04/2020 10:31

I love butternut squash! I've still got 2 small butternuts in the cupboard, but it's too warm here for soup - like PPs I'm craving big crunchy salads!

Dinner yesterday was HM meatballs with tomato sauce and lumpy polenta , the leftovers of which I will fry and serve with fishcakes tonight made with tinned mackerel and some of the potatoes which I am still working through.... and some salad.

ptumbi · 18/04/2020 10:31

Weeds - those croissants look fab! Will you be making them again Grin?
