You can just use less of the lemon if you want it to be less prominent.

OMG DH went to the shops for the first time in 2 weeks....had the biggest, freshest, crunchiest most delicious kale salad ever chocker full of fresh veg

We’ve not physically been to the shops for over 4 weeks now, and tomorrow we finally have our 1st grocery delivery (booked weeks ago). In the meantime we have been supplementing our stores of non-perishables with a couple of morisson’s essentials boxes and a click and collect from a nearby farm (but no choice in what veg was in the box, and obviously it was mostly more of the same as we already had - some root veg, cabbage, onions, potatoes, a couple of heads of greens etc).

All that to say, I am so looking forward to hopefully getting all or at least most of what I ordered and having a bit more variety of foods to work with, and especially some proper, fresh, crunchy salads. I really had to restrain myself from being like a child in a sweetshop and ordering multiples of absolutely everything. 😆 But our fridge is small and so is our freezer, so I really didn’t want to order too much with a risk of not being able to use it before it goes off - I’d rather be wanting a little more than I have, than have to throw stuff out.

Here’s hoping I get everything on the list!🤞🤞🤞

We’re having our Easter roast today, having pushed it back several times over the past week because there were other things that needed eating. So it’s pork belly with thyme with garlic crushed potatoes, glazed carrots and parsnips, and fried cabbage! Yum!

Hello!
Lots of lovely food on these threads!
Does anybody know what I can do with the stalk bit of broccoli?
Usually I take all my food waste to work to put in the compost bin, can't do that as regular now because I'm only working twice a week, (not know though because of Easter).
I don't want to throw it away, any ideas apart from soup or stock, I have lots of that in the freezer.
Oh and I'm vegan.

Hello!

You can treat the broccoli stalk exactly like you do the rest of it - boil, steam, fry, roast etc. It can take a bit longer to cook than the florets, that’s all. It’s delicious.

Or you can use it as a stock or soup base. Slice and freeze with other veg odds and ends until you have enough.

Oh heh missed the bit about not stock/soup.

I’ve always used the stalk, I chop it up and use it with the rest of the broccoli every time I cook with it. Or sometimes I’ll keep the stalk and roast it specially since that’s one of my favourite ways to have it.

My guinea pigs love broccoli stalk! I’d recommend getting a pair to help out with the broccoli issue. They’ll also eat your carrot tops and pretty much anything else going.

I’m finally actually making aloo tikki tonight after saying I’m going to do it all week. There’s a recipe in my new book I’m going to use that will also use up some leftover quinoa. No fresh coriander so I’m hoping dried will be ok. Still struggling a bit with post viral tiredness and have had a fair bit of work to do for my signing course.

Help me out guys.... best way to cook a half side of salmon so it doesn't shrink! It's got to feed 3...

cricketmum84, you could make a foil parcel and put it in the oven?

Rough recipe
Slice some lemon lay that on the foil, add salmon, drizzle with oil add some herbs and seasoning, close up the parcel and bake.

Or, if you have cream cheese, lay that on top of the salmon add breadcrumbs with lemon rind mixed in and bake. But not in foil, parchment would work better, if you are worried about the smell.

I don't think salmon really smells though?

Slow roasted at 110c!! Honestly it is THE best way to cook salmon.

The method is here - www.theguardian.com/food/2018/aug/25/four-favourite-salmon-recipes - scroll down to the spiced salmon with the herb salsa. though you don't need to do any of the marinade etc, I just whack it on baking paper with salt & pepper and a few slices of lemon underneath and cook very low and slow for 40-50 mins for 900g (start checking after 30 mins). Won't shrink or be overcooked as it's such a slow roast.

Also for those with leftover marzipan, this recipe for roast stone fruit with a sort of rubbly almond and marzipan crumble topping is a winner and you can eat it for breakfast

I know it says stone fruits but I've made it with a mix of fruits before including pears, and also made without the flower water, and it was still lovely.

Oh, I like the sound of those Xioaxiong I have lots of tahini as a result of getting over-excited about how cheap it was in a Middle Eastern supermarket in Leeds last year. I may have about 3Kg left Grin

Ooh so many things you can do with tahini, you lucky thing. I just made sabich for dinner last night, with amazing tahini sauce. Same sauce can go over greens, rice, eggs, falafel, anything! Any recipe by Honey & Co or Ottolenghi will help you use that tahini up super fast... lamb siniyah is one of my favourites and will use up 200g of that tahini by itself.

Does anyone have a favourite shop they would love to be able to visit right now?
Mine would be See Woo Chinese cash and carry in Charlton, Hediard in Paris and The Bristol Sweet Mart (lovely Indian and Pakistani mangoes will be hitting their shelves in a couple of weeks now). I could divert OH to the Sweet Mart on his way home from work, but it's not the same as being there myself and I am likely to get a very random substitute if something isn't in stock!

(Also in that lamb siniyah recipe ignore the instruction to skin your own tomatoes and not to use tinned toms. Life's too short, man...)

The lamb looks great and I have all the ingredients.
I love tahini sauce and it goes on all sorts here. Had it with my Easter lamb at the weekend. I started off with considerably more Tahini than that - who knew you could buy it by the bucket?!

@weedsneeds - I'm missing Fortnum & Mason - just for the prettiness - sad but true. And also then popping across the road to Laudree for a box of macaroons.

"Stalk soup" was suprisingly nice - with a slice of cheese on toast. Even green hating DC2 ate it quite happily. DD spent yesterday afternoon making berry muffins with the dregs of a bag of frozen berries and posting updates of her baking on Tik Tok - apparently writing about baking on mumsnet is very passe. Not sure I'd have the patience to stop and hair flick at the camera every few minutes as she does though.....

Foodies, I’m struggling.

Had lousy sleep last few nights, result is I’m knackered, pain is worse and I can’t rely on my legs so I’ve been sticking to easy stuff.

Partly I must admit a bit of “rebelling” against feeling I’m being “dictated” to what I can eat dependent upon what’s due to go out of date!

So wed I had pesto pasta as I hadn’t had it for ages and really fancied it. Last night I had 2 of the pasties (they’re quite small) with chips and I even 😱 dared to open a tin of beans!

Anyone else feeling similar?

Now I’m feeling guilty as I’ve a ton of stuff in the fridge I think I need to use today or tomorrow for it to be safe and I don’t fancy any of it!

Quorn pepperoni
Pineapple cottage cheese
Yogurts (fruit ones, I’ve really started feeling nauseous at the thought of eating!)

What is going on? Why do I feel this way?

I really don’t feel up to cooking and if it was purely my choice I’d just have cheese and crackers, inc the pepperoni & cottage cheese.

Op I HAVE repeatedly tried ordering scales - out of stock everywhere around here!

@Londonmummy66 I’ve several portions of ratatouille already in the freezer. I was thinking a moussaka at some point but I need the energy/will to cook!

I felt the same the past few days graph. Have some easy meals and don’t worry about it. I’ve managed to make more space in the freezer by eating oven chips and pizza which is good!

If you fancy cheese and crackers, go for it. You could make a picnic type plate up and call it a ploughman’s, or tapas style tea or something to make it sound more fancy.
