Have you got tinned peaches (or fresh ones)? If so you could make a peach cake with some blueberries added to it. Or a crumble. I also think blueberries go especially well with waffles, if you have a waffle maker.

Bananas...I’m partial to banana cakes of all descriptions... but you could also try banana ice cream - maybe to have with those waffles!

Forgot to add the link...

This is the peach cake I’m going to make:

And if you happen to have pecans and bourbon, here is a really delicious tasting recipe for banana:

Banana pancakes with blueberries would use up some of them :)

I love banana pancakes! And I do often add blueberries to them, as well as to plain pancakes. In fact I made some earlier this week!

Purple blueberry banana bread is an absolute staple round here. I don't have any blueberries or I'd make it today! I'd just make your usual favourite banana bread (my favourite is on Smitten Kitchen, the Ultimate Banana Bread) and stir in all the blueberries just before it goes into the tin.

PurpleDaisies · 16/04/2020 13:11

That’s the winner xiao. Might be a bit short on banana but will scale down.

Ninkanink · 16/04/2020 14:58

Today I made more curried potato and cauliflower as I had potatoes that needed using, plus I wanted some more to have for lunch with the leftover dahl. Decided to have it with a fried egg today, and a piece of toast. Tomorrow will be our fourth and final lunch of leftover dahl and I’m quite glad, tbh! You can have too much of a good thing...🙂

I think I’m going to do a Thai red curry tonight. Massively looking forward to it! Also meant to be doing some baking but I’m just not feeling it so I don’t know if it will actually happen.

Have you all seen the Playmo thread that’s currently running? If not, check it out. It’s so gentle and fun, and oddly comforting.

I made banana and marzipan muffins yesterday with left over marzipan from Easter.

@Graphista if you do fancy pancakes they can easily be made using a ratio:

Quick demonstration

You can cook them in advance and keep in the fridge for a couple of days (layered with baking parchment), or freeze them.

I’m sorry I keep suggesting cakes and scones etc - I keep forgetting you don’t have scales!

I wonder if you should order a scale and the other bits you need from amazon/Argos/wherever? You could maybe just open the box on the street once he has left it for you, then just take the item itself inside and clean or disinfect as you usually do, then go outside and break down the cardboard and put it straight into the bin, that way you’re not bringing any possible contamination inside. Would that work for you?

Everyone's food looks so delicious - my efforts are pretty feeble by comparison.

I had a long shift at the foodbank yesterday so I kept supper simple - my adaptation of Jamie Oliver's green pasta using the leaves from the cavolo nero and chard in my veg box. I've kept the stalks for an experiment - I've also got some broccoli stems and the tough spines from some chinese leaf so I'm going to try making a "stalk soup" with some onions and garlic.

Lunch was chinese leaf fennel and orange salad in the garden - as soon as I set the table the sun went in - typical. Now its freezing....

@Graphista Delia has a lovely recipe for oven roasted ratatouille which your ingredients seem ideal for www.deliaonline.com/recipes/international/european/french/oven-roasted-ratatouille

Leftovers are good in pasta.

You can do a variant where you add some cubed stale bread to the veg and five minutes before the end you top with cubes of a softish cheese - eg brie.

PurpleDaisies · 16/04/2020 16:42

Oooh, marzipan! Dh bought some the other day, maybe those are the new winner.

Could you share the recipe?

Tonight I’ve got a class online so it’s leftovers all the way. Pasta salad from yesterday (the last of the homemade pesto) with focaccia and stuff from the fridge. A new bottle of gin arrived so it’s happy days here.

Weedsnseeds1 · 16/04/2020 17:05

I made a sort of wedding cake rocky Road for my cousin a while ago. I subbed in diced marzipan, walnuts and rum soaked sultanas instead of marshmallow. It was very tasty!

SegregateMumBev · 16/04/2020 17:25

Thinking of making Jack Monroe's micrwave brownie tonight, I think I have all the greedy ants.

PurpleDaisies · 16/04/2020 17:33

Here’s tonight’s dinner. Just added some cheese and breadcrumbs on the leftovers from yesterday and baked for twenty minutes.

Crispy pancakes, using the remains of last night's florentine. Eat your heart out Findus!

Hi all, hope you don’t mind me asking a question - I haven’t posted but have been reading your thread and love all the ideas. I’ve got some golden syrup in a plastic bottle that’s been on my shelf for a while - the expiry date has actually rubbed off! It might be about 2 years old as I remember using some ages ago on 2 separate occasions to make flapjacks. Would it still be o.k to use or should I bin it? I don’t want to waste food, but also don’t want to eat anything that could be dodgy as I’m 29 weeks pregnant.

Weedsnseeds1 · 16/04/2020 19:56

Golden syrup is fine, it's such high sugar that nothing unpleasant can grow in it.

Ninkanink · 16/04/2020 19:57

The golden syrup will be fine, it’s basically pure sugar so it pretty much stays safe forever.

Homemade crispy pancakes!! Grin Looking forward to grabbing the recipe for those.

Work has been a bit manic this week so I have days of the thread to catch up on but just had to share this most favourite leftover roast chicken meal of the week!
We had stir fry last night with noodles and I had leftovers so I put them in the bottom of the bowl. Boiled up my homemade chicken stock with star anise, coriander seed, Sichuan pepper corns, sugar, 5 spice, fish sauce and some leftover roast chicken. Then I poured the lovely hot broth over the noodles and garnished with coriander and mint. It was super delicious!

PixieN · 16/04/2020 20:01

Thanks @Weedsnseeds1 and @Ninkanink I’m really enjoying experimenting with baking again!

Ninkanink · 16/04/2020 20:54

I changed my mind on dinner, since we’ve had so much curry lately. Instead I made this, with a couple of substitutions:

Mary Berry’s Parmesan-crusted Chicken

I used creme fraiche instead of cream cheese, and blitzed up a dried malted loaf slice instead of the white breadcrumbs, and a slice of preserved lemon instead of lemon zest.

Also made tricolore penne dressed with green pesto and antipasti (aubergine, peppers and olives).

That looks delicious, Ninkanink. And reminds me I have an open jar of preserved lemons. I don’t love them, but want to use them. Any ideas for recipes where they wouldn’t be overwhelming?

Weedsnseeds1 · 16/04/2020 22:06

Furble crispy pancakes - make pabcakes, beat an egg, brush around edge of pancakes, stuff with whatever, fold over and seal, brush with rest of egg, sprinkle with dried breadcrumbs, chuck in oven for about 20-40 mins at 160C
