Looking forward to hearing everyone's store cupboard meals! Has the current situation changed what and how you eat?

I'll go first:

Homemade banana muffin for breakfast
3 lotus biscuits with coffee
A banana post- home workout
Another coffee

Dinner will be an interesting creation: a kind of lemony rice-cabbage thing with anchovies. Hoping it turns out ok!!

Usually at the weekend I go all out with a late brunch as a treat on a Saturday: scrambled eggs. (remember eggs?) avocado, maybe some halloumi if I'm really pushing the boat out, sourdough. I'm definitely eating less overall, I think possibly as a result of being better slept, since I just have to roll up to my kitchen table by 9.30 these days as I'm working from home. I don't know if I'm necessarily eating better since I've had a fair amount of sugar today already, but I think fewer calories overall, so swings and roundabouts...

Linseed bread and peanut butter for breakfast
Coffee
Home made tomato and all-spare-veg soup with more linseed bread

Am trying to be inspired about how to use the last bit of roast pork for evening meal.

SpoonfulofDragon · 28/03/2020 14:22

Cold Gluten Free Pizza - I do not rate/advise.
Tangerine
Kiwi

Let us know how the Lemon and Anchovies combo turns out please?

Sourdough toast and marmite, OJ & coffee for breakfast
ryvita with humous, clementines and a bag of crisps for lunch
pear and a cookie for snacks.

Before this I was off all bread, snacks and sweet stuff, so not a good change. I need to get a grip and stop eating rubbish.

rainingoutsideagain · 28/03/2020 14:25

Cheese and ham salad sarnie slathered in salad cream for breakfast and another one for lunch. Tonight pesto pasta with mozzarella

ellanwood · 28/03/2020 14:27

@MichelleoftheresistanceMichelle - when we have left over roast pork, I cut it into really fine strips and add it to stir fry veg with sesame oil, soy, ginger and sweet chilli. It's lovely.

allfurcoatnoknickers · 28/03/2020 14:27

It's only 10:30 am here so I've had 2 cups of tea and a toasted everything bagel with smoked salmon and cucumber dill cream cheese.

IggyAce · 28/03/2020 14:28

Breakfast was scrambled egg and bacon.
Lunch crisp bread, soft cream cheese, spinach and coconut & lime chicken.
Dinner my DH is making chilli which I’ll have with cauliflower rice. Will be leftovers so will freeze some for future meal.

Michelleoftheresistance · 28/03/2020 14:29

Elan thank you!!! Lovely idea! Flowers

CarolHasAnotherUTI · 28/03/2020 14:31

Breakfast : a plum and oat 'crumble' with oat milk
Lunch : frittata with patatas bravas
Snacks: home made oatie biscuits

Not decided on dinner yet. Might be pasta and leftover tomato sauce, might make a chilli or falafel.

We have a bean to cup coffee machine which I LOVE making milky cappuccinos with, but to make our milk go further we are now back to instant coffee. First world problem but I do miss those frothy coffees! This morning I had a yogurt, then for lunch some chicken noodles followed by a slice of Victoria sponge cake (made with my 5 yr old to help keep him busy). Then tonight we've got some lamb meatballs, pitta breads, dips and salad for dinner.

ArseholesOnToast · 28/03/2020 14:32

I made bread yesterday and I don’t know what went wrong but it’s like a bloody brick. I’m persevering though so had some toasted just with butter. I’ve had two coffees with uht milk.

I’m going to make a quiche using some wrinkly peppers and on the turn cream. I’ll also make some white choc and pecan cookies - the big soft ones - as a treat.

Not bad for day 8 of being at home.

Bluntness100 · 28/03/2020 14:34

Not great a keto bar and black coffee for breakfast, then a cheese and salami omelette for lunch. In between did a weights session and cleared out all the cardboard boxes we ve been collecting and burned them (we have a big garden so doesn’t impact anyone).

Now having a glass of Prosecco and mumsnetting as my husband was being annoying, giving too many instructions on how to fold cardboard like I might be confused about the concept. 😂

No idea what to make for dinner. Might ask him to do it as penance. If so, it will be something mince based, as it’s all he apparantly cooks...

DaphneFanshaw · 28/03/2020 14:35

I had a banana and 2 satsumas for breakfast.
Spaghetti hoops on toast for lunch, with a side order of quavers.
3 chocolate digestives and a cup of tea for pudding.

Dontrainonmyparade · 28/03/2020 14:37

We had a treat breakfast/brunch as I shopped yesterday. I don’t usually eat breakfast and the kids have porridge/cereal but we thought a treat would cheer us up.

Kids had dippy egg and soldiers.
Adults- toast with mashed avocado, rocket, poached eggs and bacon.

Lunch for most was tinned soup, I ate the leftovers from last night (risotto).
Dinner later is halloumi couscous burgers with wraps, salad and homemade wedges.

I’m finding it hard to get fresh meat - for meals - so we are having to be creative with vegetarian meals. Otherwise though bread/milk/cheese/ham/fruit/veg etc (usual staples for breakfast/packed lunches) has all been stocked so it doesn’t seem too bad at the moment.

ThePluckOfTheCoward · 28/03/2020 14:40

Boiled duck egg with two slices toast and spread. 3 big mugs of tea. Will probably have a hot cross bun or bit of cheese and apple as a snack and then homemade ratatouille and 2 chipolatas for dinner + 1 glass of wine.

swapsicles · 28/03/2020 14:44

Porridge for breakfast, parsnip soup for lunch, usually do pea and parsnip but only one portion left with a gf roll hidden in the back of the freezer. Snack of home popped popcorn which I realized was a year out of date and exploded over the hob as I used too small a pan!

Callimanco · 28/03/2020 14:50

I had Greek yogurt with some elderly blueberries for breakfast. For lunch I made leek and potato soup for the family; I finished off the Bolognese sauce from spag bol Thursday night.
Meat delivery has just arrived so it might be burger, frozen chips and frozen peas for tea.

frankie001 · 28/03/2020 14:52

TolstoyAteMyHamster · 28/03/2020 14:55

An elderly cheese and chilli hot cross bun
A kale and spinach salad with pumpkin seeds and a thinly sliced pork chop.
Two easy peel oranges that were on the turn

Today is eat whatever needs eating day. Anyone found eating food that doesn’t need eating gets no crisps later.

RemusLupinsBiggestGroupie · 28/03/2020 14:59

Toast and Marmite for breakfast.
Cheese and grapes (no bread) for lunch.
I got posh cakes delivered from a local bakery yesterday, so half of one of those as an afternoon treat.
I've made a veggie chilli for later, which we'll have with rice and a homemade salsa, and wine.

WaterIsWide · 28/03/2020 15:00

Porridge for breakfast with a cup of tea.

Beans on toast with bacon for lunch. I also had a bread roll and some salt and vinegar popchips. (The beans were in the cupboard before lockdown). One can of diet coke.

One chocolate malted milk biscuit and a cup of tea.

Tea will be chicken fajitas followed by apple crumble and custard.

ThePluckOfTheCoward · 28/03/2020 15:03

@frankie001. Wow, that all looks wonderful, am loving the china tea cups and matching side plates.

Frokni · 28/03/2020 15:10

Bagels with butter and jam
Cheese and tuna salad
Caribbean takeaway for dinner :-)

shreddednips · 28/03/2020 15:11

The afternoon tea looks amazing!

No breakfast for me because I'm not well and had no appetite, but DH and DS has peanut butter on toast.

Tofu noodles with all the bendy veg from the fridge stir fried for lunch.

Dinner will be soup that I've made from all the leftover veg whizzed up. It's sweet potato, tomato, onion and chickpeas. Goodness knows what it will be like. With toast.
