I'm just about to make flapjacks & something else, but can't decide what something else should be!

If you're baking today, what are you making?

Scroll down for recipe! We've started making our own oatmeal by grinding porridge oats in a coffee grinder (cheaper!) but you can buy ready ground oat flour. For the cheese ones we add 40g grated Parmesan instead of the herbs.

I made some profiteroles earlier because I was entertaining at lunchtime. They're a good one to do because they're easy but they look impressive, plus you get to use a piping bag, which I think is quite calming.

Me and the kids have made some weird little biscuit/cake things called Whoopi Pies. They were in a childrens baking book my dd got for christmas, I think they're an American thing! On the downside they've used up the last of my flour, god knows when I will be able to replace it!

I've made choc brownies with cranberry and almonds.

My strategy is to try and live off my leftover dry goods and baking bits (from Christmas baking) this week.

(We are in complete lockdown in my country, so I figured DS and I would need some nice treats to get us through the week.)

Tomorrow I'm planning to make a pineapple upside down cake and a pear upsidedown cake to use my maize flour up. I have one pear and half a tin of pineapple slices. 😅

I thought as I can make bread, and enjoy making it, I'd leave the bread in the supermarket for others, and pick up some strong flour, so I too have a sourdough loaf proofing in the kitchen at mo. First attempt, and I'm quite excited. 😳

No baking here, but have roasted veggies in the oven along with sweet potato pakoras, and simmering in a hob top pan is a tomato and smoked paprika mushroom and onion sauce.

......Serving up in 20 mins!

Not baking but meal prepping. I've done a chicken and chickpea curry, chilli and a bolognese. 10 portions for the freezer out of that lot plus tonight's tea. I've also reorganised my freezer and ditched all the cardboard packages to make more space.

I fancied doing some baking today but tried several shops and all the flour was sold out.

I have some in the house but I'm reluctant to waste it on something fun when I might need to make bread or something later in the week.

I've been trying to use up any bits & pieces that have seen better days, as I am trying to be mindful of food waste - both for environmental & possible quarantine reasons! So i have made

Banana bread
Banana flap jacks
Apple & BlackBerry crumble

And I have saved potato peelings to turn into crisps & have broccoli stalk & some leftover stilton (doggie bag from a pub meal) to make a soup with.

Also, for his homework, DS2 (& DH) made bread from a Roman recipe, using just flour, oil, salt & water. It was easy to make & quite tasty, if somewhat stodgy.

@LER83 yes they are American and they are delicious. I love a good whoopie pie. I haven’t had one in years. Depending on where you are in the US, you an get locally made ones in bakeries/delis or packaged ones in supermarkets and gas stations.

I made a naff puff pastry tart thing a string to use up all stuff we've already go. Was basically rolled out sheet pastry, red pesto, frozen peppers a couple of chopped up pepparamis and assorted cheese. Was okay but not much substance and very flakey. Basically turned into dust when you bit into it

I've not made anything today, but yesterday DD1 and I made a Victoria Sponge and a Black Forest Gateau for birthday cakes. Very nice they were too!

Snickerdoodles. Lovely American biscuits/cookies made with loads of cinnamon and cream of tartar. Oh yes.
