I made an enormous pot of green curry with mini aubergines, red bell pepper, broccoli, sweet potato, and tofu which I have been eating all week. Still not bored of it, considering eating it for elevenses.

Home made chicken pie with mash. Veggies in pie for me raw veggies for kids cos they never eat cooked veg!
Maybe pancakes and maple syrup for pud?

My daughter has decided to go veggie this week. I mentioned that animals die for her to eat them. Got perfect stocks of meat and two veg. Now have to try and work out non-meat and two veg.

@Layoverlife Glad you enjoyed it. If you like a bit of warmth add a bit of lazy chopped chilli and it is even better.

Home made pizza - now, I suggested rocket, goats cheese and caramelised onion chutney but kids said no, just tomato and mozzarella and it is not worth buying all that extra stuff for one so margherita it is.

Trying a pinch of nom recipe for cabbage rolls in a tomato sauce with some steamed broccoli. Made it last night so just need to put in the oven later. It looks like it should taste pretty good but is something different for us to try so let’s see!

Tonight my most fussy DC is out at his dad's. They usually do pizza as far as I can tell!

DC2 and I are doing fish and chips when I pick him up from karate.

We had a Jambalaya today from the latest Pinch of Nom book. Absolutely delicious and my serving came in at under 500 calories. Will definitely make it again.

It's the one evening this week that DD and DS are both not working, and I have been wanting roast beef for a bit, so we will be having a lovely roast with all the trimmings.
