What cake?

Me and my DH are opening a small hut. A tea and coffee stop its along a local well used walk. (Weve already checked and applied for various licensing) we are keeping things very very simple just selling tea, coffee, hot chocolate and cold drinks maybe some prepackaged biscuits and a cake of some sorts. My DH things a good flapjack were as I think and old style school sponge (nice cake with white icing and sprinkles) These will be homemade by me. What would you be more likely to buy along a walk ....any suggestions welcome I.e brownie? Coconut jam sponge? Shortbread?

I think vanilla cupcakes would be a safe bet, maybe some with vanilla and some with chocolate buttercream icing?

I don't like buttercream, find it sickly, so I wouldn't want a cupcake.

I like all your suggestions OP! Flapjack, brownie, coconut jam sponge (or a Bakewell) and shortbread. Traybake, so square portions - easier to eat standing up.

Are you expecting people to stop and sit in the hut or outside? Are you providing plates and napkins? Maybe you need something that can be held whilst walking, so things like brownies and flapjack would be easier from that point of view. Tray bakes basically.

If you’re expecting them to hang around, then Victoria sponge, lemon drizzle, banana loaf, carrot cake and chocolate cake always seem to be popular. You could experiment when you’re established perhaps.

My favourite is orange or lime and coconut. Wink

Brownies will always be popular - especially if you get a good recipe. How about lemon drizzle traybake, gingerbread people with smartie buttons or shortbread biscuits with chunks of chocolate in?

Agree with Foxy about the classic favourites. They'd be my choice rather than cupcakes. Millionaire's shortbread and homemade fudge too.

My shop is v similar. Flapjacks are king. Brownies good if not too big or too gooey. Nothing with icing or soft enough to require a plate or fork. Traybakes are perfect, icing/chocolate drizzle, easier to eat on the hoof than a slice from a round cake. Lemon is always mega popular. Also cookies with smarties etc. Cupcakes with piped icing never sell as well. Bear in mind that these days it's almost expected that you'll have gluten free/vegan options. My cakes are all made by a friend who is a hobby baker so I buy in good quality frozen gf options and make sure they are kept separate.

The trouble with sponges is that they go stale very quickly, so I think you'd need to be confident of selling them within 24-48 hours of baking them. Brownies and flapjacks will last considerably longer. Millionaire's shortbread is lovely, but it's not the cheapest thing to make IME because of how much butter it has in it. Might be nice to have a vegan option too.

Muffins - Chocolate ones and blueberry ones

I would have a savoury option even if it’s just crisps and maybe some fruit.

You could have a cake of the day if you don’t have room or time for lots of cakes.

Well, when I'm on a walk feeling all virtuous Grin I'd go for a healthy ( or fake healthy) flapjack - type treat.

I’d do flapjacks & a cake (alternate between lemons drizzle, Victoria sponge, cupcakes so you’ve something different each week)

I think the biggest thing for you is making sure you’ve got top quality coffee, If people try it once and it’s rubbish they won’t be back!

Sell dog biscuits too.

I’d maybe add a savoury option as people don’t always want cake. Sausage rolls, perhaps?

Yep it's a pretty much grab and go type thing. So was thinking traybakes. Yep we are having a big bowl of water and complementary dog biscuits Grin for the dogs

Oh DH is a coffee drinker and he said the same thing it will be kenco millicano coffee and yorkshire tea bags. I wont be doing GF/Vegan/new fad type cakes am afraid I will get a box of soya milk portions that's about as far as I will go. I am keeping it as simple as can be.

I wouldnt want a sausage roll and think I'd do a form of pie instead and sell by the slice. Maybe corned beef and potato or similar. OP all of this food talk is making me hungry!

Bit out of order to lump GF/vegan/new fad all together. GF isn’t a choice or a fad for many people.
