What cake?

Me and my DH are opening a small hut. A tea and coffee stop its along a local well used walk. (Weve already checked and applied for various licensing) we are keeping things very very simple just selling tea, coffee, hot chocolate and cold drinks maybe some prepackaged biscuits and a cake of some sorts. My DH things a good flapjack were as I think and old style school sponge (nice cake with white icing and sprinkles) These will be homemade by me. What would you be more likely to buy along a walk ....any suggestions welcome I.e brownie? Coconut jam sponge? Shortbread?

If you going to offer a savoury option, quiche is a contender. I'd be inclined to choose that over cake.
But if cake, lemon or chocolate top of list.

A small new venture can't cater for every dietary option.

I would do cheese scones for a savoury choice just because they don't need refrigerating.

It is easy enough to make your brownies gluten free and they taste just as good with a bit of gf flour as regular flour.

Yep Rationalcat that's what I mean. I cant and wont be able to offer for all dietary requirements as it's only a small venture we are attempting.

Love your plan. Good luck. Another vote for tray bakes. I'd avoid proper big cakes. Too tricky to eat on the hoof. If you could swing bacon rolls that's what I would be happy to see on a walk. Wish someone was doing this by me or I had the guts/opportunity

Flapjack is very easy to make both vegan and gluten free so I'd have that and make sure most allergens are avoided.

Flapjacks and cupcakes are divisive I think and I wouldn't buy either.

I'd go for Brownies as they always seem popular and cakes made in a loaf tin, they usually mature and last longer and are very easy to sell in slices. I make versions with ground almonds and polenta rather than flour, so that's an option too.

Should have added made with coconut flour, coconut oil and alpro yogurt as I had no coconut cream

I slice and spread with meridian wild blueberry fruit spread

Traybakes and muffins, though you might have to think about the cases being litter. Barista oat milk is really good OP.

I agree with @Foxyloxy1plus1 'nice sponge cake' isn't easy to eat standing up / on the go.

Flapjack
bara brieth
chocolate concrete
fruit cake
tray bakes (lemon / choc / ginger sponge squares or things like rocky road or chocolate disgestive type cakes)

but not butter cream / ganache / icing / cupcake type things

If you have a non dairy milk for the drinks go with oat milk. Much more popular and nicer tasting.
I agree with cakes which can be cut into squares. Cookies are always good if they have decent bits of chocolate in them.

Working in a cafe where we make all of our cakes ourselves,the ones that sell well are coffee and walnut,lemon drizzle,Victoria sponge,carrot cake,flapjacks (chocolate,seeded,honey and gluten free ones)

Is kenco Millicano instant? I sound like a coffee snob but I wouldn’t be happy to pay for instant even if it is a small hut. What about a filter coffee machine?

Yeah I was going to say the same as @pinkonwednesday, it's a bit rum charging for instant coffee. Investing in a couple of filter pots wouldn't break the bank and would soon make their money back.

Sad to see there will be no gf/ df cakes
They aren’t difficult you know.
Just gluten free flour and non dairy fat in them if you wish to keep it simple
We deserve cake as well.
You just need to say wwe can’t guarantee any cross contamination as they’re made in a kitchen where we produce gluten cakes
