What cake?

Me and my DH are opening a small hut. A tea and coffee stop its along a local well used walk. (Weve already checked and applied for various licensing) we are keeping things very very simple just selling tea, coffee, hot chocolate and cold drinks maybe some prepackaged biscuits and a cake of some sorts. My DH things a good flapjack were as I think and old style school sponge (nice cake with white icing and sprinkles) These will be homemade by me. What would you be more likely to buy along a walk ....any suggestions welcome I.e brownie? Coconut jam sponge? Shortbread?

Made them twice now and they haven’t disappointed

Walnut and date or raisin muffins

They are very forgiving. If you don’t get the right amounts ...it doesn’t appear to matter..yet

Walnut Raisin muffins...I used dates for a change

Ingredients..American measurements..luckily I have the measuring cups

Makes 6
1/4 cup coconut flour
2 tbls coconut oil or butter melted
2 tbls of coconut milk or cream..I had none so used alpro coconut yogurt
3 medium eggs
1/4 teaspoon vanilla essence
1/4 teaspoon baking powder
I also added same of xanthan gum
1/3 cup raisins..I did liberal sprinkle of chopped dates..plus a few more for good measure lol
1/3 cup walnuts..again another liberal sprinkle
3 tbls honey...I used about 2 black treacle and 1 honey

Black treacle gives them such a lovely flavour

Blend eggs, coconut oil, honey treacle mix, coconut milk, vanilla
Add coconut flour
Stir in dates walnuts etc

Put into greased muffin tins for 205 c gas mark 6

Says 15 mins..but was nearer half hour on my old oven

They are so nice, I doubled up on everything and made 12

I’m glad I didn’t do all treacle..there was just a nice treacly undertone. Any more and it would’ve overpowered

I used 4 tbls in the 12 cake mix and two honey

Hope you can cope with the American cups stumped. I used tiana coconut flour but I understand you can get it a version in Lidl which is much cheaper

Howard Middletons gf baking book fell into my lap. (50p in library sale .bargain)He uses lots of different flours so I’m dying to have a go but I’ll need to track down things like amaranth and teff flours
Also want to try some savouries.

I made a bit of a blooper. I melted the coconut oil, then added it to the 6 fresh from the fridge eggs..well you can imagine what happened..the coconut solidified

Anyway got the bamix out and that sorted it .
Next time I think I’d add the wet ingredients to the dry, then coconut oil , then dates and walnuts.

Thanks for all the feedback....I dont think I will have enough space for a coffee machine I am literally just having a hot water urn and supplies I need ie milk, tea, sugar, coffee, cups. Our prices are going to be low anyway I dont think £1 cup of coffee is unreasonable.

Agreed. I'll happily fork out for real coffee but won't touch instant.
I wouldn't recommend oatmilk either. Gluten and lactose intolerances often go hand in hand so your dairy-free customers may not be able to drink oat milk. Soya milk is not as nice but definitely a safer bet.

You need something easily held pref without a casing in case of littering. Our local park does flapjacks, biscuits and ice creams in cones as well as coffee and tea.

I hate cupcakes, far too sweet.

I'd go for a double chocolate muffin, a loaf cake with some dried fruit in it and lemon drizzle cake.

I'd also do cheese and fruit scones.

Don't listen to the coffee snobs OP, instant will be fine. Sounds like you are catering for walkers etc, they will want something warm and coffee tasting, not the best Illy coffee with 100% arabica beans.
Remember a good sturdy bin and maybe a discount for anyone with their own reusable travel mug?
Cake wise - tray bakes definitely, and flap jacks are cost effective to make. It's tricky to keep costs down if you cater for GF/Dairy Free and as you are charging low prices for your coffee and tea, I imagine the same for your cakes? (I can't see you being able to charge £3 for a slice of cake)

Oh DH is a coffee drinker and he said the same thing it will be kenco millicano coffee and yorkshire tea bags. I wont be doing GF/Vegan/new fad type cakes am afraid I will get a box of soya milk portions that's about as far as I will go. I am keeping it as simple as can be.

Just saw your posts about allergies. It's extremely easy to make cakes dairy-free, just use pure or vitalite margarine and oatly foamable milk. You will make an excellent cake. Dairy-free dark chocolate is very easy to get too.

Gluten-free is far more difficult if you are making your own and have small premises, I'd go for something prepacked because I'd be terrified of cross-contamination in my home kitchen.

I cant see what is wrong with my attitude here. I can not cater for every dietary requirement. I am literally going to be in a tiny tiny hut just focusing on drinks primarily and the cake is just an afterthought.

GF I have no experience in at all.
Vegan I will be offering soy milk
New faddy stuff like no carbs, high protien, no sugar, no fat type of thing I can not cater for as I said am literally in a hut and wont have masses of storage.

Think I will go with chocolate drizzle flapjacks a big bunch of bananas on a stand.

Very similar place near me does tea, coffee, the most amazing hot chocolate to go with their incredible cinnamon buns.

Out of your suggestions I'd go with flapjacks as sponge can dry out quite quickly.

I run a tea stall at a football club each weekend - same as you we use a couple of urns, instant coffee, tea bags and hot chocolate. If you have room for some chocolate bars, as back up to the flapjacks (they will probably go like the proverbial hot cakes on busy days) so you can still offer something sweet to recharge the batteries of the weary walker! We buy the multipacks when we see them on offer in supermarkets and charge 50p.

Sounds wonderful when you are out for a walk. I'd certainly pay £1 to save carrying a flask Smile
Some people don't seem to be grasping quite the venture you are starting. It really isn't a quaint tea shop or 'independent coffee shop', but a hut, half way up a hill.

Some people aren’t getting that all you’ve got is a hut, so obviously you can’t cater to every diet known to man. Most of these diets also effect a small % of people, they are not the biggest market.

Look in to hot chocolate sachets too OP, do able with an urn and adds a bit more variety.
