What's on your meal plan this week?

We're completely stuck in a rut mealwise and I'm hoping for inspiration. Ours is usually a variety of mince based dishes (chilli, spag bol, cottage pie etc), curry, chicken, oven food one night and possibly a takeaway. I'm so bored of it all.

-stir fry beef and broccoli with rice
-pork belly with rice, baby corn and broccoli
-Sausage casserole with yorkshire puddings
-pasta bake

We don't usually have that much rice in one week!

Tonight we are having keema 'pizza' flatbreads and salad.

Tommorow DD has beavers so is on beans on toast and me and DH are having a Maggi chicken thing with veg.

Saturday cod and prawn tagine with cous cous

Sunday is big shop day so will meal plan again then

Lemon and walnut pasta isn’t really a recipe it’s so easy. You can add sautéed courgette, prawns, salami to ring the changes a bit.

Cook a packet of spaghetti ( depending on numbers you are feeding)

Gently toast about 200g roughly chopped walnuts in a frying pan. Set aside.
Melt some butter ( about 3/4 a packet) until it starts to caramelise and milk separates out. Throw in a few of sage leaves if you have them. If you want heat, a little chilli purée goes well too. Or a teaspoon of honey.
Add in the zest and juice of a lemon. Then the walnuts back in.
Mix the sauce back with the pasta. Sprinkle with some fresh parsley if you have it and fresh Parmesan.

We shop on Fridays so the meal plan goes Friday - Friday. This week for me, vegan DH, 2 DC:
Friday pizza (DH ate something else later)
Saturday veg stew
Sunday mushroom and chickpea curry
Monday pies (not homemade), veg and mash
Tuesday stir fry veg and tofu, rice
Wednesday fishcakes, peas, potato waffles (DH apparently got a burger delivered later)
Thursday pasta with a tomato and olive sauce

Not a very inspiring week, I did too many night shifts so didn't have the time or the inclination to make anything exciting

This week, we have mostly been eating...

-Salad of Chinese leaf, sugarsnaps, cherry toms, celery, cucumber, orange pepper and a few Sable grapes (weirdly lovely in a salad), with chicken marinated for a few mins in soy sauce and cornflour then cooked in a pan.
-Pork shoulder steaks slow cooked in stock with carrots, with broccoli.
-Frozen pizza
-Roast chicken
-Wholewheat Spaghetti Bolognese
-Steak and salad
-Chicken burgers with a popped rice coating (Birdseye frozen ones) with brioche roll and chips for Mr Twiglets and bunless with salad for me.

We aren’t vegan, but do eat a lot of plant based meals and this week have decided to eat fully vegan.
I enjoy it because it gets me trying recipes and eating food I wouldn’t normally. I found it has been useful to get out of a rut.
