What's on your meal plan this week?

We're completely stuck in a rut mealwise and I'm hoping for inspiration. Ours is usually a variety of mince based dishes (chilli, spag bol, cottage pie etc), curry, chicken, oven food one night and possibly a takeaway. I'm so bored of it all.

Tonight is roast pork with pear, crispy sage & celeriac, from the MindfulChef box I treated myself to, so the pressure is off to constantly think of meals.

I found a recipe on Epicurious I like the sound of. Coconut, apple and ginger dal. I fancy making it next week.

Thanks for all your plans. Some great ideas. This is mine for the week, with NO mince!

In no particular order.

Bacon chops with mash, veg and cauliflower cheese.
Sweet potato and spinach lasagne
Sausage casserole
Fish, chips and peas
Roast beef and trimmings
Frozen pizza and salad
Salt and pepper chicken and fried rice(fakeaway)

Monday - chicken noodle soup followed by veggie burgers (light soup)
T- kung poa chicken
W- leek and feta filo Roland
T - halloumi and couscous herb salad
F- kale detox salad
S - haven't decided
S - pork chops with caramelized apples.

So far this week we've had (mix of lunches and dinners)

Dhal, raita, kachumbari salad and naan bread

Traybake of Brussels sprouts, thinly sliced lemons, shallots and chicken with a honey mustard garlic topping. Potato wedges on the side.

Leek and potato soup with seedy rye bread and butter

White bean and fennel stew topped with crushed tortilla chips, avocado, feta, olives and coriander

Lasagne and broccoli

Pizza night with a big sharing plate of cherry tomatoes, cucumber, peppers and avocado

Skillet of chorizo, onions, shredded Brussels sprouts, chard and peas topped with a fried egg

A really yummy quick tea is halloumi wraps with sweet chilli sauce and salad leaves. So quick and filling just grill the halloumi and make up the wraps ten minutes tops. Shame my kids won't eat it

eminybob those tomato tarts are one of the few vegan recipes my DC really like and request regularly, I usually just do normal potatoes rather than mustard ones though.

beefarseer that dal sounds nice. Maybe we will have that next week!

I really struggle with mealplanning but think I should get into it. Dont you end up with leftovers and random unfinished veg.

M - Cacio e Pepe pasta
T - hot roast beef sandwiches with gravy and chips (leftover beef from Sunday)
W - Mexican beef quesiladas with salsa, guacamole and sour cream
T - subway and donut (sight test after school then rugby training)
F - Saffron chicken and flatbreads
S - Korean fried rice
S - Pork schnitzel with celeriac remoulade and roasted new potatoes.

I got the Gordon Ramsey 30 min meals book as my secret Santa so most of this weeks meals are from that.

Your usual week sounds like mine but I'm making a concerted effort to add at least 1 preferably 2 new recipes and more veggie meals each week.
Winners this week have been:
Pimped mac n cheese (stir fry kale, mushrooms, garlic & chilli the mix into the usual cheese sauce - really lifts it)

Roast cauliflower, peppers & onion with cumin seeds - top with halloumi for the last 10 mins to melt/brown.

I added roast veggies (blitzes in passata) to my Bolognese sauce and it was AMAZING plus added bonus of extra veg.

Paella - BBC good food quick easy paella really is quick & easy and a very good for a weekday meal.

Swopping usual meat for fish in curries - no one batted an eyelid Wink

We’ve got so much food in our freezer. We’re just using that up this month. We have mince, chicken thighs, meat balls, lamb chops, gammon, salmon, tuna, mixed seafood.

We’re just buying sandwich stuff and fresh veg and fruit. Some of the freezer stuff is obvious. Cottage pie, curry, meatballs with pasta, curried lamb chops, gammon egg and chips, salmon parcels, tuna steak or bake, seafood pasta.

New week meal plan (because I plan Friday - Thursday):
Friday pizza
Saturday dhal
Sunday 'chicken' and mushroom pie made with vegan pretend chicken strips, veg and mash
Monday I will be at work at dinner time, DH didn't decide what to make for DC and him
Tuesday fish, baked beans and rainbow chips (carrots, beetroot and parsnips cut into chip shapes and roasted)
Wednesday tomato risotto
Thursday pasta

At in-laws for dinner tomorrow
M- chicken & asparagus quiche with salad
T - jambalaya
W- cheese & onion crisp bakes with pickles and salad or veg
T - leftovers from the week as both working late
F - Going out to a brilliant chicken restaurant

Wednesday - pizza for kids, garlic chicken for me (working 4pm-8am)
Thursday - pie, mash and veg
Friday - lasagne
Saturday- roast pork, roast potatoes, Yorkshire puddings and veg
Sunday - fajitas
Monday - pizza and hot dogs (DS1 birthday party)
Tuesday - chicken and bacon potato topped pie

That's as far as I've got in planning!
