Best Orzo recipes?

Bought a bag today as I've seen a soup recipe I want to try, but there's lots of it so I'd like to make up a couple of dishes.

If you eat Orzo, how dobyou like it?

I've had it in a traybake which was great. There's a series of books about using a roasting tin and it was in them.

My sister made a delicious salad with orzo - it had sundried tomatoes in it, basil, can’t remember what else - maybe feta? Cucumber, cherry tomatoes...

Orzotto. Any old risotto recipe substituting the arborio rice for orzo. You can put all the stock in at once rather than bit by bit like a traditional risotto.

This is based on one of my grandmother’s recipes, though the amounts are very approximate - apologies!
Sweat an onion down, in olive oil, and a couple of crushed garlic cloves, then add 2 or 3 diced courgettes. When they’ve softened a bit add a couple of tins chopped tomatoes.
Then add a cup of orzo and vegetable stock.
When the orzo is cooked stir through half a block of chopped feta and a handful of shredded basil leaves.
It doesn’t look that appealing, but it’s delicious.

These all sound great, love that I can add it to a cold salad too. I find other pastas not so great cold.

This is delicious and so easy, you just throw everything in 1 pot and stick it in the oven. It's like pizza in a bowl!

Similar to above, onions, garlic, courgettes, cook orzo in stock, and add a bucket of Parmesan. No tomatoes though.

BBC do a good warm chorizo and chickpea salad which I just add orzo to at the end and it is deeeeelicious!

I like to cook it with chicken stock and fresh parsley and then top it with king prawns fried in garlic, butter and lemon juice! Top it all with more parsley Smile

I made this scrummylane.com/one-pot-creamy-chicken-bacon-mushroom-orzo/ recently, it was lovely. I added the peas as suggested. The only bit of it that I don't rate is the use of the word 'lazy'. I'm damn sure there's nothing lazy about my life, and making an easier dinner doesn't change that Grin

Fry onions, add chicken stock and orzo and a carton of pasata or chopped tomatoes. After ten minutes transfer to oven and stir every 10/15 mins for about 90 mins. We have this often with any meat.

The one and only time I've had it was mixed into that cold tomato soup thing, name escapes me.

I don't like pasta or soup, and I'm not even a huge tomato fan, but that bowl didn't even need washing after I'd finished with it!
