Help needed with your tried and tested gf and df cake recipes..thank you

I made chocolate brownies with cocoa powder, sweet potato, pea nut butter and maple syrup..they were ok but I felt they needed a kick in the pants

Not sure what..not chilli..maybe coriander, maybe try a spoonful of blueberries

Also made polenta, pink grapefruit and pistachio cake from the bbc website..that was nice but not to everyone’s taste

I’d like to make something everyone can enjoy at xmas, me and dh are gf and df and sil is df

What goes down well with your family.
I need to road test them now as we go away for two weeks before xmas.
( we’ve only been gf and df for four months so bit of a new ball game for us)

I make gf and df cakes all the time. I just use my favourite recipes and substitute doves self raising flour and milk alternative. I use oat - gluten free is available if you aren’t excluding all oats but I have used other ones.
Slightly different texture (lack of bite) but go down well - enough that people don’t always know they are gf df.

If you think of what recipe you like I can see if I have one - I usually do lemon, chocolate, carrot but have successfully made all sorts including lemon meringue pie if you are thinking of more pudding ideas.

Dairy free--Betty Crocker devil's food cake mix. Made with a can of coke. Think the indulgent chocolate frosting is dairy free as well.

I’m not a lover of margarine..what is the best butter alternative...I’ve used coconut oil in the polenta cake...but you need to be careful it doesn’t end up too oily I think
I always like to use brown or muscovado sugar..but happy to give treacle, honey or molasses a try
Today would’ve been a great day to practice..if I’d only had the ingredients

I make this one quite a lot, you can substitute olive oil for butter (measurements at the bottom). it gets devoured at the office!

Carrot cake
www.bbcgoodfood.com/recipes/yummy-scrummy-carrot-cake-recipe I use a bit less oil. Probably 150ml (can add water to keep moist)

Chocolate cake (we don’t use the coffee)

I tend to use margarine but you can usually substitute with vegetable oil use about 3/4 the amount so it isn’t too oily.

Use it as a good excuse to bake lots of cakes!

This works brilliantly using Doves Gluten free self-raising flour (and doesn't actually need the baking powder). Use extra orange zest and orange essence for a really orangey cake.

Nigella's Chocolate Olive Oil cake (it's in Nigellisima, or on her website) works v well and is soft and moist. I make it with doves farm GF flour, not ground almonds (nuts are banned at Dd's school) and it turns out well.

My DD is vegan and she makes cakes using packet mix and a can of pop.
It's usually Dr. Pepper, she just stirs it up and bakes it, and she loves it.
Disclaimer: nobody else has ever tasted it Grin but she loves it.

Ta-daaa

Lemon drizzle cake..tweaked a bit

150G of light muscovado sugar..we don’t like things too sweet
145 g of coconut oil..too much can be a bit oily
3 eggs
Zest of two lemons and a few drops of lemon oil
125 g of gf flour
100g ground almonds
Pinch of bicarbonate of soda

Drizzle..juice of two lemons
Whatever zest was left on them after what went in the cake
50g of icing sugar..again we like it a bit sharp
Warmed till it thickened into a bit of a syrup

Tastes really nice

Just waiting for the carrot cake now

It’s taken me all afternoon as I haven’t baked for years..
Went to my baking drawer and I’ve had to wash everything in there

Carrot cake was similar
150g light muscovado sugar
145 g of coconut oil
3 eggs
Pinch of bicarb
200g of gf flour
A sprinkle of ground almonds
100 g of raisins
140g of grated carrot
Some cinnamon oil as I couldn’t find and powdered cinammon
I had nutmeg oil..but couldn’t be bothered to rake around any more for it..but put a sprinkling of lemon, orange and tangerine oil in

I’ll make the same drizzle
50g of icing sugar
Orange zest
And juice from two oranges

Then I’m off to bed lol

We were supposed to be having roast chicken dinner tonight..but it’s sausage and beans 😂

And it tastes bloody lovely..who knew gf and df cakes could be so nice tasting.
Pity the family don’t like fruit cake..that will have to be for me and dh
Next to be baked ...sometime this week will have to be a chocolate cake and a polenta cake
