Lemon curd cake.

I'm SURE I saw a recipe for a lemon curd loaf a while back, but all was forgotten about until now..
I've half a pot of yoghurt that needs using up and some fancy lemon curd lurking in the cupboard which made me think, "oooh! I know what I'll do"

I can't find what I saw! All the Lemon curd cake recipes are for a lemon victoria sponge sandwiched with curd, or a butter sponge with the curd mixed in.
It was yogurt, olive oil, lemon curd, flour, sugar, eggs, baking powder and it comes out as a simple looking, rich yellow loaf.

Can anyone help?
(Nope, I cannot guess the measurements! I'm not a fantastic bakerBlush)

I made this recently but you need to cut the baking time

Raera
Thank you for looking but no. That's ad much the same as what I find with Google searching and there's no curd actually in it.
Boy that cake is flat. I like my loaf cakes fat, short and high. I dunno why a long flat loaf irks me so much!

Argh, it's like the recipe had gone "poof" Confused

No yoghurt in that one! MWestie

Perhaps I dreamed the recipe....

Is it something like this? It sounds delicious

FeltCarrot · 24/10/2019 19:03

I’ve made a Paul Hollywood lemon curd cake before, he calls it Mrs Posts cake or something like that. It’s delicious!

Antaresisastar · 24/10/2019 19:13

This is lovely , lywww.bbcgoodfood.com/recipes/lemon-curd-blueberry-loaf-cake

Years ago on another parenting website, I remember everyone going mad for this sort of cake. It definitely had yoghurt & oil in it.
I never made it but there's definitely a recipe out there!

Gentleness · 24/10/2019 20:14

This? It has no curd (though you could use it warmed for the glaze). Was the curd mixed in to the batter?

Just spent a happy half hour trawling through my recipes (scraps of paper cut from magazines and hand written ones, years old from friends Grin).

Can't see a lemon curd one but this is a lemon cake and has yoghurt in it...

I've been trying to find a recipe for it too. My granny used to make an amazing one... I ended up using a Mary Berry loaf recipe, replacing some of the milk with lemon curd. It worked pretty well.

RufusthebewiIderedreindeer · 24/10/2019 22:42

What about this one confessionsofabakingqueen.com/lemon-curd-loaf-cake/

Wonkybanana · 24/10/2019 23:06

OP are you sure it had lemon curd in it? The recipes for yogurt and lemon (but not curd) loaf cake look much more promising.

D'you know what I'd do (but then I'm a maverick baker, Paul Hollywood would hate me), I'd do something like this www.foodnetwork.co.uk/recipes/lemon-yoghurt-cake-0.html and whack in half a jar of lemon curd as well. It would be lovely.

TanselleTooTall · 25/10/2019 12:23

Wonkybanana Yes, I'm certain.

Horsemad That's encouraging to read - at least I know I've not imagined things. But I wonder why it's not easy to find now?

RufusthebewiIderedreindeer yes, I saw that one as well (and a PP also linked to it up thread) but it's not the one I originally saw and also the recipe isn't right. This recipe had no butter in the sponge. The fat came from olive oil and yoghurt.

Urghhh, why is this so awkward!?!

And yes, very much like an all in one, everything was chucked in together, mixed until smooth and bung into a loaf tin. No swirls of curd or a glaze on top.

Any chefs/cooks/bakers about. Perhaps you could hazard a guess as to what the measurements could be?? For say, a three large egg loaf? I dare not estimate myself!

My lemon drizzle cake has quite a bit of lemon curd in it, but not yoghurt I don't think. now I'm intrigued OP!

Horsemad · 25/10/2019 15:44

What about this? There is no yoghurt in it but could you substitute the yoghurt & oil for the butter in the recipe?

ineedaholidaynow · 25/10/2019 15:48

I have made some lemon curd muffins that had yoghurt and oil in

SilverySurfer · 25/10/2019 15:54

Damntheman I loathe yoghurt so would you mind sharing your recipe, please?

Drogonssmile · 25/10/2019 15:58

Sorry PP had already beat me to it!

Drogonssmile · 25/10/2019 16:02
